Every Friday I share a round-up of low-carb recipes you might want to make over the weekend. But recently it struck me that some people might not have time to look through a long round-up every week. And I remembered that back in the early days of my blog I used to do short Friday night round-ups occasionally, and I decided it might be fun to update some of those or do new short round-ups with easy low-carb options for week-night dinners.
So this collection of Five Easy Low-Carb Recipes for Week-Night Chicken Dinners is my first mini-round-up of things you can make for dinner when you’ve got chicken breasts or leftover rotisserie chicken in the fridge. Hope people enjoy trying at least one of these recipes! And I want to keep this short, so let’s go right to the recipes!
