This recipe for Chicken Alfredo Lasagna Casserole is a sibling of the mega-popular No-Noodle Lasagna with Sausage and Basil that’s been such a hit, and this new lasagna casserole also uses Folios Parmesan Cheese Wraps for the noodle layer.
I’m still finding Folios at my Costco and you can get them at Amazon too if you don’t find them in your store. And Kara and I both loved this when we tested the recipe, and we also thought the leftovers reheated well, making this a perfect Weekend Food Prep recipe!
I used low-carb Alfredo sauce in a jar to make the Chicken Alfredo Lasagna Casserole extra easy to get into the oven. And the other shortcut was using one of those packages of Costco Rotisserie Chicken breast for the chicken, so all you have to do is cut up the chicken.
But this mock lasagna casserole would also be amazing to make with with leftover turkey, any time you’re lucky enough to get some! If you like the idea of a layered casserole with chicken and Alfredo sauce, I hope you will give it a try!

I’m recommending Rao’s Alfredo Sauce (affiliate link) for this recipe because the flavor of the Rao’s Alfredo is so, so good. But this sauce is pricey and also can be hard to find! Most bottled Alfredo sauce is low in carbs, so if you have a brand of low-carb Alfredo Sauce you’ve enjoyed you can definitely use it. Or if you want to make your own low-carb sauce you could try Creamy Low-Carb Alfredo Sauce or Creamy Cauliflower Sauce.
Do you need Folios Parmesan Cheese Wraps for Chicken Alfredo Lasagna?
If you canโt find Folios Parmesan Cheese Wraps at your store, please donโt let that stop you from making this tasty mock lasagna! You can buy the Parmesan Folios Cheese Wraps (affiliate link) at Amazon.com, or just use a firm sliced cheese like Provolone to replace the Folios; it will probably melt a bit more but itโs still going to be delicious.

How to Make Chicken Alfredo Lasagna Casserole:

- This first photo shows the pack of rotisserie chicken breast from Costco that we used for the chicken.
- You need 8 cups of diced chicken (or turkey) shown here in a giant measuring cup, but if you get the Costco package you can use the whole package if you don’t mind the chicken/mushroom layer being slightly thicker.
- Chop up 1 lb. mushrooms, heat olive oil, and cook mushrooms until nicely browned. Remove mushrooms to a plate.
- Add chopped onion and cook about 3 minutes.
- Then add Poultry Seasoning, Garlic Powder, and Dried Sage and cook a minute or two longer.
- Add the mushrooms and diced chicken to the frying pan and gently stir to combine.
- Then add Rao’s Alfredo Sauce (affiliate link) or your favorite Alfredo, stir to combine, and cook at a low simmer about 10 minutes.
- Spray the baking dish with non-stick spray.
- Cut the Folios in half and cover the bottom of the dish, putting the straight side along the edge of the dish.
- Put half the chicken/mushroom mixture over the Folios.
- Put 1 1/2 cups grated Mozzarella over the chicken/mushroom layer.
- Make another layer of Folios, chicken/mushroom mixture, and the other 1 1/2 cups grated Mozzarella. (You can get by with a bit less cheese if you prefer.)
- Bake at 375F/190C for 30-35 minutes, or until the mixture is hot and the top is browned.
- Let it sit for 10 minutes before you cut into eight pieces to serve.
- This freezes well and can be reheated in the microwave.

Chicken Alfredo Lasagna Casserole
This Chicken Alfredo Lasagna Casserole is a delicious way to use chicken, but don't forget about this recipe when you need ideas for leftover turkey! And this recipe uses several convenience products that make it extra-easy to get on the table.
Ingredients
- 1 lb. mushrooms, chopped into medium-size pieces
- 1 T + 2 tsp. olive oil
- 8 cups diced, cooked chicken (see notes)
- 1 small onion, chopped
- 2 tsp. Poultry Seasoning
- 2 tsp. garlic powder
- 1 tsp. dried sage (sometimes called rubbed sage; more or less to taste)
- one 15 oz. jar Rao's Alfredo Sauce
- 4 Parmesan Cheese Folios, cut in half
- 3 cups grated Mozzarella cheese
Instructions
- Cut up about 8 cups of diced chicken, a bit more or less won't hurt.
- Chop up 1 lb. mushrooms, heat the 1 T olive oil in a large frying pan, and cook until mushrooms are nicely browned and any released liquid had evaporated. Remove mushrooms to a plate.
- Add chopped onion (and a little more oil if needed) and cook the onion about 3 minutes.
- Then add Poultry Seasoning (affiliate link), Garlic Powder (affiliate link), and Dried Sage (affiliate link) and cook a minute or two longer.
- Add the mushrooms and diced chicken to the frying pan and gently stir to combine.
- Then add Rao's Alfredo Sauce (affiliate link) or your favorite Alfredo Sauce, stir to combine, and cook at a low simmer about 10 minutes, or until the sauce has thickened and reduced a bit.
- I used my favorite lasagna dish that's 7.5" x 11.5" x 3 inches deep; choose a size that's close to that. Spray the baking dish with non-stick spray.
- Cut the Folios in half and cover the bottom of the dish, putting the straight edge along the side of the dish. (I only needed two Folios per layer for my size dish but bigger casserole dishes might need three.)
- Put half the chicken/mushroom mixture over the Folios, spreading out so it's an even thickness.
- Put 1 1/2 cups grated Mozzarella over the chicken/mushroom layer.
- Make another layer of Folios, chicken/mushroom mixture, and the other 1 1/2 cups grated Mozzarella. (You can get by with a bit less cheese if you prefer.)
- Bake at 375F/190C for 30-35 minutes, or until the mixture is bubbling hot and the top is lightly browned.
- Let it sit for 10 minutes or so before you cut into eight pieces (although it will still taste great if you can't wait that long, it just won't hold together as well.)
Notes
You can use a bit more or less chicken, depending on what you have. Use leftover turkey if you have that! Use any low-carb Alfredo Sauce you have if you don't have Rao's.
This freezes very well and reheats beautifully in the microwave.

Had this for supper tonight and it was delicious. I too, just used some Parmesan cheese with the mozzarella. It does not say what one serving of net carbs is!! It has 8 fiber but what is 816 mg of carbs??? If it’s low carb, we need the carb number.

i made this for dinner – I had never heard of a “folio” so i just added some parmesan to the recipe. I also added broccoli for some vegetables. It turned out great, will do it again.

I haven’t ever done it that way so I can’t say for sure. If you do decide to try it, I would recommend letting it come to room temperature before you bake it.
Sorry you felt that way, but I am not sure what you could do now that it’s cooked. Maybe serve with more Alfredo sauce over it? That’s the only thing I can think of.

In Utah I see them at Costco and my grocery store. But if you don’t find them, use slices of Provolone or another firm white cheese.
