I’m a huge fan of casseroles for Weekend Food Prep because I love the idea of cooking once and having leftovers to freeze or eat for a few days. And there are a lot of recipes in the Casseroles category on this blog! So it was a bit hard for me to narrow down my picks to just Five Favorite Low-Carb Casseroles, but if I had to choose only five, these are all casseroles I’ve made over and over!
