Friday Favorites: Five Favorite Casserole Recipes

Last week I created a new section in the recipe archives for Casseroles, something a few people had asked for through the years, and I thought it would be fun to announce it by spotlighting a few of my favorite casseroles. When I was teaching school, I’d make a casserole nearly every weekend and divide it into containers to take for lunches during the week. I know casseroles are a family-friendly dish, and I’m committed to finding more casserole options that are also South Beach Diet Friendly.
That said, I want to confess that one reason I was slow to create a Casseroles section may have been because some of the casseroles I posted in the earliest days of the blog used ingredients like canned soup that I don’t cook with now. They also may not be up to current standards for photos and recipe format. In the end I decided to include those recipes because they do have some fans, and I’ll be working on updating them over the next few months.
Pictured at the top of this post is one of my very favorite casseroles to make when I have leftover turkey at Thanksgiving, but you can also make it with chicken any time of year. This Brown Rice Casserole with Leftover Turkey, Mushrooms, Sour Cream, Cheese, and Thyme is loaded with flavor.
This Greek-Inspired Leftover Brown Rice Casserole with Red Pepper, Onions, and Feta is a great way to use leftover brown rice, and it’s a nice side dish for any type of roasted or grilled meat. I’d also eat this as a meatless main dish with a green salad on the side.
I’m always hearing from readers who’ve tried this Easy Baked Pesto Chicken and it quickly became a favorite for me as well. This is a good option for phase one, or for other phases you could eat it with some rice to soak up the tasty sauce.
A casserole from the past that’s very tasty is this Chicken with Asparagus and Three Cheeses. I did update this once to make it a bit lighter than the original version, but it’s still probably a “once-in-a-while-treat” if you’re dieting.
Finally, the last casserole I posted was this Better-than-Mom’s Chicken, Broccoli, and Quinoa Casserole with Creamy Curry Sauce, which shot right to the top of my personal list of favorite casseroles. This recipe definitely reflects the kind of casserole I’d like now, adding nutritious quinoa and making a sauce with no canned soup. If you haven’t tried this one yet, I highly recommend it!
