Friday Favorites: Five Favorite Casserole Recipes

There’s a new section in the recipe archives for Casseroles, and these are five of my favorites.
Last week I created a new section in the recipe archives for Casseroles, something a few people had asked for through the years, and I thought it would be fun to announce it by spotlighting a few of my favorite casseroles.  When I was teaching school, I’d make a casserole nearly every weekend and divide it into containers to take for lunches during the week.  I know casseroles are a family-friendly dish, and I’m committed to finding more casserole options that are also South Beach Diet Friendly.

That said, I want to confess that one reason I was slow to create a Casseroles section may have been because some of the casseroles I posted in the earliest days of the blog used ingredients like canned soup that I don’t cook with now.  They also may not be up to current standards for photos and recipe format.  In the end I decided to include those recipes because they do have some fans, and I’ll be working on updating them over the next few months.
Pictured at the top of this post is one of my very favorite casseroles to make when I have leftover turkey at Thanksgiving, but you can also make it with chicken any time of year.  This Brown Rice Casserole with Leftover Turkey, Mushrooms, Sour Cream, Cheese, and Thyme is loaded with flavor.
This Greek-Inspired Leftover Brown Rice Casserole with Red Pepper, Onions, and Feta is a great way to use leftover brown rice, and it’s a nice side dish for any type of roasted or grilled meat.  I’d also eat this as a meatless main dish with a green salad on the side.

I’m always hearing from readers who’ve tried this Easy Baked Pesto Chicken and it quickly became a favorite for me as well.  This is a good option for phase one, or for other phases you could eat it with some rice to soak up the tasty sauce.

A casserole from the past that’s very tasty is this Chicken with Asparagus and Three Cheeses.  I did update this once to make it a bit lighter than the original version, but it’s still probably a “once-in-a-while-treat” if you’re dieting.

Finally, the last casserole I posted was this Better-than-Mom’s Chicken, Broccoli, and Quinoa Casserole with Creamy Curry Sauce, which shot right to the top of my personal list of favorite casseroles.  This recipe definitely reflects the kind of casserole I’d like now, adding nutritious quinoa and making a sauce with no canned soup.  If you haven’t tried this one yet, I highly recommend it!

  1. Thanks for bring thoughtful but the "homemade" canned soup has flour which is an ingredient I try to avoid.

  2. I understand that none of the ones you posted contain canned soup, but you talked about not posting others because they DID you canned soup…I thought the link I gave you might help with some additional casseroles you might want to post.

    Especially the turkey one- leftovers are what make Thanksgiving one of my favorite holidays!

    We are so busy! Sometimes I just don't have time to grill or prepare meat, fix two vegetables or one and a salad. Casseroles were my busy life go-to until South Beach complicated my meal planning (and helped me lose weight!) Thanks!

  19. I have a category for casseroles, but now that you mention it, I'm wondering when the last time I actually looked to see what was listed there! You've got some yummy ones here. The make it and freeze it idea does come in handy, doesn't it? Does lasagna count as a casserole? That's what is in my freezer.

  25. Big fan of casseroles or one pot dishes too. I occasionally do the extra caloric versions, but have trimmed my fat content tremendously, as you have. Now that I have a rice cooker, I can cook up a big batch of rice or quinoa, use my slow cooker to cook beans, add fresh ingredients, fresh herbs and a little high impact flavor ingredients like feta or parmesan and viloa- a lovely, tasty dish.

    Kalyn, you always inspire me and I love your recipes. Thank goodness for your blog. Oh, and…more casseroles please. ;o)

  27. The Baked Pesto Chicken is easy and so tasty. It's become a nearly weekly meal in my house (my 3 year old even likes it!) I can't wait to try out some of the other casseroles.

  29. How great to have a new category for cassroles! Most of the ones I make are egg-based casseroles for breakfast or brunch, but I love the idea of using leftover brown rice as the basis of some great vegetarian dishes.

  31. Lidia, will keep an eye out for casserole without cheese, but there are already some options there that would work for you and many more where the cheese could easily be left off the top.

  35. I really love casseroles. For some reason when I was a kiddo I thought they were 'gross'… kids ?! Now I love them… I've come up with a few fun ones I posted about on my blog. One with sweet pot, black beans, quinoa & chicken and another with brown rice, sausage and spinach. Both made cheesey w. one cup of pureed cottage cheese.

    I really want to try out your broc chicken curry casserole… I'm totally on a curry kick right now!

  36. thank you thank you thank you thank you! i am always looking for south beach recipes that are family friendly. casseroles and slow cooker recipe save me during the week but i don't want anything that is loaded with cream of something soup. these are perfect!

  38. Even though I live in New England, I don't make nearly enough hearty casseroles to combat the chilly weather. I've already bookmarked the Greek-inspired brown rice one; that looks perfect.
