Gardeners everywhere celebrate August 8 as Sneak Some Zucchini on to Your Neighbor’s Porch Day and many years ago I posted this collection of zucchini recipes in honor of that day. But every year I keep cooking with zucchini and updating the post with more zucchini favorites, and now there are more than 50 Amazing Zucchini Recipes here, after I’ve been adding new ones for a few years!

Are the zucchini recipes low-carb or Keto?
This collection has my favorite zucchini recipes from Kalyn’s Kitchen, so most of these recipes will be low-carb or Keto. But there are still a few old favorites from the early days of the blog, many of which can easily be made low-carb with minor changes. Stuffed Zucchini Recipes:
Meat, Tomato, and Mozzarella Stuffed Zucchini Cups is a recipe that’s been a big hit! I make the “cups” by hollowing out extra-large slices of zucchini.
Taco Zucchini Boats are loaded with Southwestern Flavors!
I used my favorite little 8-Ball Zucchini for these Stuffed Zucchini with Ground Beef.
For a meatless option for stuffed zucchini, there’s this tasty Vegetarian Stuffed Zucchini with Brown Rice, Black Beans, Chiles, Cheddar, and Cotija Cheese.
Zucchini Side Dishes:
You can use a lot of different garden veggies in this Garlic-Lover’s Vegetable Stir-Fry, but zucchini is one vegetable I’d always include.

Here's something to try with zucchini, if you haven't. My brother told me about a dish he had in Italy with burned zucchini and tomatoes. Slice up your zucchini as you would to cook it for a side dish and put it in a frying pan with a little olive oil. Cook over medium-high heat until the zucchini chars some on the outside. (Not just a golden brown, really dark.) Add tomatoes ( I just use canned Italian Seasoned ones.) and warm through. This really does something for the zucchini, making it somehow better than ever.

I finally have time to grow a garden since retiring in March. Of course the zucchini and yellow squash are prolific. I have tried your recipes but find they are soupy. Do you cook the zucchini first? Additionally, I have made bread and butter pickles with my zucchini, yellow squash, onions, and pimentos…delicious. You can't tell they are not cucumbers

RJ, I have heard of people freezing shredded zucchini and baking with it in the winter, but I haven't tried it. If you have a FoodSaver, sealing it in a bag would be the way I would do it.

Thanks for some great ideas, love the marinated raw salads, I never would have thought of that! One of our favorites is zuchini crab cakes
shred 2-3lb zuchini and toss with 1/2 tablespoon old bay seasoning, let sit in colander and press well after 30 min.
add 1 diced onion, 1 egg, and enough breadcrumbs to make it tacky and saute till golden brown on each side.
they freeze great and we eat em all winter long, a similar greek style recipe can be done with salt instead of old bay, 1/2 cup feta, chopped parsley and mint, salt pep to taste, and then fry in olive oil

I have grated zucchini and let it drain. Then mixed it with grated cheese, thinly sliced onion and chilli to spread as a pizza topping.

We had so many zucchini, and vegetarian friends were coming over, that I made a zucchini lasagna, swapping the zuccs for the pasta. It was amazing, and ever-so-easy. But we still have some left over so I'll have to tuck into some of your recipes.

I'm making a zucchini bake this evening for our support group meeting: zucchini, sweet onion, almond flour, olive oil, and seasonings. It's a recipe from Ali at Whole Life Nutrition Kitchen. Everyone loves it. I even added some chicken, cheese, and tomato sauce, and turned it into a main dish as Cheesy Chicken Zucchini Bake. One needs never be short on ideas with your listing. We recently had a zucchini roundup for No Croutons Required and the entries were fabulous, it was one of my favourite rounds. You can be so creative with zucchini or courgette as we call it in Scotland.
These recipes look wonderful. Zucchini is my most favorite summer vegetable, so I'm always looking for new things to do with it. I really wish I had a neighbor who felt the need to ditch some on my doorstep.

I think the neighbors used to run the other direction when they saw me coming with sacks of zucchini. I have a favorite salad of shredded raw zucchini, swiss cheese, walnuts with a basic vinaigrette dressing. It is on my blog. This post makes one realize you cannot have too much zucchini!

That makes it sound like you'll still get zucchini. If that doesn't fit what's happening with your plant, I would google to see what else you can find! Good luck!

I was excited to try to so many of your recipes with my fresh produce this summer, but unfortunately my garden has only given me a handful of green and yellow beans and 3 cucumbers.. 🙁 I've loved every recipe I've tried so far!! If you don't mind, I was wondering if you know what pops the flowers off of my zucchini plant, and what to do to avoid this next year? I have a garden fence, have used insecticides and have been fertilizing! I've never had this problem!!! Thanks…
