I have to confess that when I proposed to Jake and Kara that we work on a breakfast recipe with bacon cheeseburger flavors, they were skeptical. And our first attempt was definitely not a keeper. But we persevered and had the idea of making it into a quiche so the bacon and ground beef flavors were a bit more concentrated, and we loved this Bacon Cheeseburger Keto Breakfast Quiche!

And as I reminded Jake and Kara, people love bacon cheeseburgers, right? That’s why so many people eat them often, and why Low-Carb Grilled Bacon Cheeseburger Meatballs have been such a big hit on the site.

How to Make Bacon Cheeseburger Keto Breakfast Quiche:

  1. Preheat over to 350F/175C.
  2. Cook thick bacon until it’s really crisp, then crumble into the bottom of your quiche pan, saving a little bacon to sprinkle on the top.
  3. Then in the same frying pan, cook one pound of ground beef until it’s well-browned. (You can remove some bacon fat if it seems like too much, but use the bacon fat to cook the ground beef.)
  4. While the beef cooks, finely chop up 1/2 an onion and 1/4 cup finely diced dill pickles.
  5. Put the cooked ground beef over the bacon and sprinkle the onion and pickles over the beef.
  6. Sprinkle one cup (or more) of grated cheese over the top of the other ingredients.
  7. Beat 8 eggs with cream or half and half, then pour that over the ingredients and gently “stir” with a fork so they’re well combined.
  8. Season eggs with salt and fresh ground black pepper to taste, but remember bacon is salty.
  9. Sprinkle the reserved bacon and the other 1/4 cup grated cheese over the top.
  10. Bake 35-45 minutes, or until the quiche is completely set, cheese is melted and the top is nicely browned.

Bacon Cheeseburger Keto Breakfast Quiche

Bacon Cheeseburger Keto Breakfast Quiche has those bacon cheeseburger flavors everyone loves, and this is delicious for a crustless quiche meal any time of day.


  • 8 slices thick bacon
  • 1 lb. ground beef
  • 1/2 onion, finely chopped
  • 1/4 cup dill pickles, finely chopped
  • 1 1/4 cup grated cheese (see notes)
  • 8 eggs, well beaten
  • 1/2 cup heavy cream (see notes)
  • Salt and fresh-ground black pepper to taste


  1. Preheat oven to 350F/175C. Spray a  9 inch or 9.5 inch glass or crockery pie pan with non-stick spray. (Probably optional, but it makes the dish easier to clean.)
  2. Heat a large frying pan over medium-high heat and cook the bacon until it's nicely crisp. Remove bacon to a cutting board or plate to cool, then crumble the bacon.
  3. Reserve a little bacon to sprinkle over the top and put the rest of the crumbled bacon into the pie pan.
  4. Remove some of the bacon fat from the pan if needed, then heat the bacon fat left in the frying pan over medium-high heat. Add the ground beef to the pan, breaking it apart with your fingers. Cook until the beef is completely cooked and starting to brown, breaking it apart with the turner as it cooks.
  5. Add cooked ground beef to the pie pan.
  6. While beef cooks, finely chop 1/2 an onion and 1/4 cup dill pickles. Sprinkle chopped onion and pickles over the ground beef.
  7. Sprinkle the one cup grated cheese (or more) over the ingredients in the pie pan.
  8. Beat the eggs until they're well-combined, then beat in the cream. Pour the egg mixture over the other ingredients and gently "stir" with a fork, so ingredients are well-combined.
  9. Season eggs with salt and fresh ground black pepper to taste, but remember bacon is salty.
  10. Sprinkle the rest of the grated cheese and the reserved bacon over the top.
  11. Bake 35-45 minutes, or until the quiche is completely set, the cheese is all melted, and the top of the quiche is nicely browned. Serve hot.


We used a blend of cheeses but any cheese that would be good on a bacon cheeseburger will work. Use a little more cheese if you prefer. Use half and half instead of heavy cream if you prefer.

  1. Would this work in 8” or 8×11”  square Pyrex dish? If so, what temp and how long?

    • I really can’t say for sure how it will work or what cooking time would be in a size of dish I haven’t made it in. But if I was going to guess, I think an 8 inch square dish will make it too thick. I would suggest trying the 8″11 dish and cooking at the same temperature. I don’t think the cooking time will be much different but I’d start to check after 30 minutes.

  2. I made this last night. The family really enjoyed it! My husband had seconds! I made it exactly as directed and was very happy with the results. I will definitely it again but it needs a bit of seasoning. People can add what they like, salt and pepper anyway. I sliced into it at the 35 minute mark, the eggs were still quite runny so I let it go for another 10 minutes. I think I added in more than 1 lbs of ground beef so that’s probably why it needed the longer cooking time. Great recipe and this will be in our menu regularly. Thanks so much!

  7. I cannot find the measurements per serving.

    • If you look after the recipe itself, I give two links (where it says “Nutritional Information”) for suggestions of two ways to get that information. That’s all I am able to do at this time.

      I’m not able to provide nutritional information for the recipes for several reasons, including the additional time it takes, the difficulty in doing it accurately, and the sheer number of recipes on my site. I have over 2000 recipes here and spend 6-8 hours most days working on the blog. I just can’t edit over 2,000 recipes to add that info, and I know once I do it on one recipe people will expect to see it on every recipe. Thanks for understanding.

  8. This recipe hit the spot for me and my usually reluctant husband. It’s great for being a quick morning breakfast, which includes the meat, giving you no need to make a side of bacon or sausage. The pickles are an important addition. Next time I’ll put more in it. Love the flavor. This is one of my favs.

  9. Honestly I don’t like pickles that much so I would just omit them if I made this. Nonetheless this looks delicious! I would make it if I didn’t have dairy sensitivities unless you can suggest a substitution for cheese (I would substitute the heavy cream with coconut cream, but that might taste different).

    Comments about the dish aside, I have to say I like how you framed the photo of the finished product because the patterns and the colors really stand out.

    • So glad you like the photo. But unfortunately if you don’t like pickles and can’t have cheese I’m afraid this recipe is probably not going to work for you.

    • Yes, it’s not working for me either. Their system has been a bit wonky lately, but they told me they were fixing it. I will let them know but there is nothing else I can do about it. I will tell you that it should work on the recipes that have been on the site for a while. It’s the most recent ones that haven’t been working right.

  11. I suspect the dill pickles and bacon  are what makes this recipe taste like a bacon cheeseburger, otherwise it would just be a ground beef and bacon quiche. I haven’t had a bad recipe on this site yet (thank you, Kalyn!!) so I’m going to have faith and try it just as written. I have a sneaking suspicion that this is going to be fabulous just like all the other ones I’ve tried! I’ll keep you posted!

  12. I was right there with you until the pickles. Not sure about the pickles. I’d cook the onions in with the ground beef, because of my own aversion to onions that are not really well cooked, but otherwise, I’m going to agree that everyone loves bacon cheeseburgers, so why not give it a try?

    • Lydia, cooking the onions is perfect for you. The pickles are small and they’re pretty soft and well cooked by the time it’s done. Just a little pickle flavor!
