It seems like most of us will be celebrating Cinco de Mayo at home this year, which just makes me sad because that unofficial holiday always seemed like a good excuse to go out to my favorite Mexican restaurant with friends! But even if Mexican restaurants are not an option right now, you can certainly enjoy amazing Mexican food at home.

A couple of my favorite Mexican food favorites are a bit higher in carbs than others, but they’re all much, much lower-carb than the Mexican food you’d get if you go out to a restaurant. And many of the recipes I picked as favorites are also gluten-free as long as you use gluten-free ingredients when specified. (The recipes with low-carb tortillas are not gluten-free.)

Low-Carb Twice-Cooked Chicken with Green Chiles and Cheese is a relatively new recipe, but this is already a favorite!
Instant Pot Low-Carb Spicy Shredded Beef Street Tacos use the Low-Carb Tortillas I love so much in a street taco size, but you can also eat this tasty beef in lettuce wraps or just make regular tacos if you prefer.
Use your slow cooker or pressure cooker to make green chile shredded beef and then make these Low-Carb Green Chile Shredded Beef Cabbage Bowls. This is a dinner I’d love any time of year!
Low-Carb Instant Pot Chicken Tortilla Soup uses strips of low-carb tortillas, or you can skip that for gluten-free and just serve with some cheese and sour cream; yum!
Cheesy Low-Carb Taco Casserole would be a great idea for a Taco Tuesday dinner, and I bet the whole family will like this one! The casserole uses cauliflower rice, but the kids will never guess it’s in there!
