Cinco de Mayo is just a couple of weeks away, and although the holiday is more widely-observed in the U.S. than it is in Mexico, I always think it’s a fun time to enjoy Mexican food for dinner. And if you really like Mexican food (like I do!) why not have it for dinner a few days that week?
I already have a huge round-up of 25+ Low-Carb Mexican Food Dinners for Cindo de Mayo on this site, and I’ve been trying to keep that updated the last few years. But I’m always coming up with new recipe ideas that involve Mexican flavors, and I thought it would be fun to spotlight my absolute favorites to make for a Mexican feast. So this post has Ten Low-Carb Mexican Food Favorites You’ll Make Over and Over! These are the Mexican food dinners I never get tired of!
Some of my favorite Mexican food favorites are higher in carbs than others, but they’re all much, much lower-carb than the Mexican food you’d get if you go out to a restaurant! And all the recipes I picked as favorites are also gluten-free as long as you use gluten-free ingredients when specified. I think these recipes are mostly pretty family-friendly too, although some things might be a bit spicy for kids.
