I love Mexican food and here are my picks for Ten Low-Carb Mexican Food Favorites You’ll Make Over and Over. Use Recipe Round-Ups to see more low-carb recipe collections like this one!
Cinco de Mayo is just a couple of weeks away, and although the holiday is more widely-observed in the U.S. than it is in Mexico, I always think it’s a fun time to enjoy Mexican food for dinner. And if you really like Mexican food (like I do!) why not have it for dinner a few days that week?
I already have a huge round-up of 25+ Low-Carb Mexican Food Dinners for Cindo de Mayo on this site, and I’ve been trying to keep that updated the last few years. But I’m always coming up with new recipe ideas that involve Mexican flavors, and I thought it would be fun to spotlight my absolute favorites to make for a Mexican feast. So this post has Ten Low-Carb Mexican Food Favorites You’ll Make Over and Over! These are the Mexican food dinners I never get tired of!
Some of my favorite Mexican food favorites are higher in carbs than others, but they’re all much, much lower-carb than the Mexican food you’d get if you go out to a restaurant! And all the recipes I picked as favorites are also gluten-free as long as you use gluten-free ingredients when specified. I think these recipes are mostly pretty family-friendly too, although some things might be a bit spicy for kids. If you do make one of my favorites for Cinco de Mayo or just for a special dinner when you’re craving Mexican food, I hope you’ll come back and let me know how you liked it!
Low-Carb Twice-Cooked Chicken with Green Chiles and Cheese is a relatively new recipe, but this is already a favorite!
Spaghetti Squash Low-Carb Taco Bowls have spicy ground beef taco meat on a bed of spaghetti squash with my favorite taco toppings!
Use your slow cooker or pressure cooker to make green chile shredded beef and then make these Low-Carb Green Chile Shredded Beef Cabbage Bowls. This is a dinner I’d love any time of year!
Low-Carb Ground Beef Cauliflower Rice Taco Bowls are another taco bowl variation that I’ve made many times!
Cheesy Low-Carb Taco Casserole would be a great idea for Cinco de Mayo dinner, and I bet the whole family will like this one! The casserole uses cauliflower rice, but the kids will never guess it’s in there!
These Turkey Lettuce Wrap Tacos with Tomato-Avocado Salsa are so delicious, but you can offer other taco shells for family members who aren’t into low-carb eating if you’d like.
There’s no doubt that these Low-Carb Fish Taco Cabbage Bowls would make the cut as one of my favorite meals with Mexican flavors. If you like fish tacos, you’ll love this recipe.
As long as you choose large Poblano peppers, these Cheesy Stuffed Poblanos with Ground Turkey are really not that hard to make, and these are so tasty!
This Beefy and Cheesy Low-Carb Green Chile Bake is another Mexican-inspired casserole that the whole family will probably enjoy!
And I have to finish out this Mexican Food extravaganza with this Green Chile and Chicken Mock Enchilada Casserole that has been such a favorite on the site! I think almost all the young moms in my extended family make this one. This is a bit higher in carbs than some of the others here, but try it if you feel like a treat for Cinco de Mayo!
