Today I’m sharing My Favorite Winter Squash Recipes, and I’m definitely a winter squash lover! I know this type of squash is not super-low in carbs, but it’s high in fiber and for me all types of this squash that stores through the winter are a treat I look forward to every fall. And I’ve got some tried-and-true recipes for cooking different types of winter squash!
I inherited the butternut squash appreciation gene from my Grandma Denny; Grandma would hack apart giant butternut squash from her garden, scrape out the seeds, and wrap pieces in foil and bake them in the oven. We’d eat the squash mashed up with lots of butter, salt, and pepper. Now I’m a fan of various types of winter squash pretty much any way you cook it!
What is Winter Squash?
Winter squash includes all the squash varieties that have a hard skin which allows them to be stored through the winter. There are so many types of winter squash (see a list of 16 varieties here), but the ones I’ve used on my blog are Butternut Squash, Spaghetti Squash, Acorn Squash, Delicata Squash, and of course Pumpkin.

How much Winter Squash is a serving for these recipe?
One thing I discovered when I was checking nutritional information for these recipes is that serving size makes a big difference for higher-carb veggies like this. For my recipes for Roasted Butternut Squash I try to keep the serving size to about one cup. Check the nutritional info and see what you think!
Is Winter Squash hard to cut up?
If you’re not that experienced at cooking winter squash like Butternut Squash, you might want to ready my post about How to Peel and Cut Up a Butternut Squash before you tackle one for the first time. Some stores sell squash cubes already prepped, but I think freshly cut squash has more flavor. You can definitely use the pre-cut ones if you prefer though, and they’re great for soup!

Magie, I do eat the South Beach bars occasionally, but usually for snacks I eat lower-carb things like cheese sticks, celery with peanut butter, or nuts.

Magie, so glad you are enjoying the recipes. I don't really count carbs. I try to eat plenty of vegetables and protein and just splurge occasionally on healthy higher carb foods like brown rice, oatmeal, whole wheat bread etc. Hope that helps.

Kalyn, dropping by for a visit after long ages away from blogging … love this post! We grow our own butternuts and last night enjoyed them pureed in the food processor with butter and a touch of honey. Smooth, silky, sweet, yum! It was the favorite dish of many at our
table that night! And yes, I roast them whole, it's so much easier to remove the seeds when it's soft and (shh) sometimes I just cut the seed end off & dump it if the rest of the squash gives me enough meat.

I love, love, love butternut squash. I was in the hospital for a few days recently and when I got home, all I wanted was butternut squash which ny husband picked up at Whole Foods…all cubed and seasoned…just popped it in the oven…I ate it for 3 days straight. Comfort food.

Butternut squash is great in chili, too! I usually make a pretty standard turkey-based one, but I had leftover butternut squash cubes in the fridge, and thought, why not add these? Yum ๐
I've also made a copycat of the dish Whole Foods occasionally has out on their hot bar, with the roasted squash, dried cranberries, red onion and rosemary.

'Tis the season, and I'm making something with butternut squash every few days. I confess I sometimes take a bit of help from the market when I know their pre-cut squash is freshly made, but once you get the hang of cutting the squash, the cooking is easy! Great collection of recipes, and I love the variety of spices.
