My name is Kalyn and I’m a butternut squash lover! I know it’s not a super-low-carb vegetable but for me it’s a treat I look forward to every fall. And I’ve got some tried-and-true recipes for cooking butternut squash, so today I’m sharing My Top Ten Butternut Squash Recipes.
I inherited the butternut squash appreciation gene from my Grandma Denny; Grandma would hack apart giant butternut squash from her garden, scrape out the seeds, and wrap pieces in foil and bake them in the oven. We’d eat the squash mashed up with lots of butter, salt, and pepper. Now I’m more likely to cut the squash in cubes and roast it with olive oil, but pretty much any way you cook it, I love the savory flavor of butternut squash.
And one thing I discovered when I was checking nutritional information for these recipes is that serving size makes a big difference for higher-carb veggies like this. But if Butternut Squash is too much of a carb splurge for you to want even a small serving, check out some of the low-carb side dishes on the blog!
Is Butternut Squash hard to cut up?
If you’re not that experienced at cooking Butternut Squash you might want to ready my post about How to Peel and Cut Up a Butternut Squash before you tackle one for the first time. Some stores sell squash cubes already prepped, but I think freshly cut squash has more flavor. You can definitely use the pre-cut ones if you prefer though, and they’re great for soup!
This Roasted Butternut Squash with Lemon, Thyme, and Parmesan is definitely a wow for me! Use even more cheese if you’d like!
This Roasted Butternut Squash with Tahini-Yogurt Sauce has those middle eastern flavors that I always enjoy!
This Slow Cooker Butternut Squash is great to make for a crowd, and I love how it also keeps it warm during the meal. Use the Casserole Crock Slow Cooker (affiliate link) if you have one, but this can also be made in any large oval slow cooker.
This Autumn Harvest Soup with Butternut Squash and Kale is a meatless soup recipe that even carnivores will love!
Roasted Butternut Squash with Rosemary and Balsamic Vinegar has been one of the most popular butternut squash recipes ever posted on this blog, and I love the flavor combination here!
This Foil-Wrapped and Grilled (or Baked) Butternut Squash with Sage was something we couldn’t stop eating when we made the recipe again to take new photos!
Lots of butternut squash soups have Southwestern flavors, and this Butternut Squash Soup with Black Beans and Red Bell Peppers has some of my favorite soup ingredients! (I love cilantro in this soup, but just use thinly sliced green onion if you’re a cilantro-avoider.)
Roasted Butternut Squash with Moroccan Spices is loaded with flavor, and this post also has 10 More Ideas for Roasted Vegetables.
This is an old photo for Roasted Butternut Squash with Rosemary, Pecans, and Gorgonzola, but this recipe is so amazing I had to include it. Don’t let the photo stop you from try it if you like those ingredients!
Slow Cooker Thai-Inspired Butternut Squash and Peanut Soup is an amazing soup I’ve made many, many times.

Kalyn, Congratulation for your website, I am huge fan of your recipes. I read a lot about the south beach diet, and I want to know how many carbs do you eat per day. I read that you do kind of Phase 1.5, and I liked that. Thanks!
Magie, so glad you are enjoying the recipes. I don't really count carbs. I try to eat plenty of vegetables and protein and just splurge occasionally on healthy higher carb foods like brown rice, oatmeal, whole wheat bread etc. Hope that helps.
Thank you very much for your response, I am going to try that, I have to cut more my carbs. Do you eat the south beach diet bars?
Magie, I do eat the South Beach bars occasionally, but usually for snacks I eat lower-carb things like cheese sticks, celery with peanut butter, or nuts.
Thank you so much you are an inspiration!
Aw, thanks! I do my share of cheating occasionally, but I try hard to stick with the plan!
Elizabeth Anne, I love hearing that! So glad you enjoyed it.
Kalyn, your blog has inspired me to start cooking. I love your recipes and the enthusiasm that you display in your posts. We made the butternut with rosemary, pecans, and Gorgonzola for Thanksgiving dinner. It was a hit! Thank you for sharing your recipes. Elizabeth
Hi Pat, great to hear from you after all these years. Glad you like the post. I just can't get enough butternut squash this time of year.
Kalyn, dropping by for a visit after long ages away from blogging … love this post! We grow our own butternuts and last night enjoyed them pureed in the food processor with butter and a touch of honey. Smooth, silky, sweet, yum! It was the favorite dish of many at our
table that night! And yes, I roast them whole, it's so much easier to remove the seeds when it's soft and (shh) sometimes I just cut the seed end off & dump it if the rest of the squash gives me enough meat.
