This Roasted Sweet Potatoes, Sausage, and Broccoli Sheet Pan Meal is a new dinner idea for fall, and this is about as easy as it gets for a dinner that’s healthy and tasty. We loved the sweet potatoes for a pop of color and flavor, but if you’re being stricter on carbs you can use more broccoli and just a tiny bit of sweet potato; or skip the sweet potatoes completely if you’d like. We thought this combination was so delicious, and I liked it so much that after we tested this recipe I made it again just for a quick dinner for myself (something that rarely happens in a house where there is always an abundance of leftover food from recipe testing!)

This dinner idea started with the Aidell’s Bacon, Mushroom, and Swiss Sausage that I got infatuated with after I sampled it at Costco, but any pre-cooked chicken, turkey, or pork sausage will work here. It’s pretty easy to find sausage that’s low in carbs, and this one has only one carb per sausage and it’s gluten-free as well. (And no, Aidells hasn’t paid me to promote their sausage and I doubt they’ve even heard of my blog!)

Sheet Pan Meals are an idea that started showing up a few years ago, and I think they’re such a perfect way to make an easy dinner. How to Make Roasted Sweet Potatoes, Sausage, and Broccoli Sheet Pan Meal:

  1. Preheat oven and spray sheet pan with non-stick spray.
  2. Cut up two medium sweet potatoes into cubes that aren’t too small.
  3. Whisk together olive oil, balsamic vinegar, garlic powder, and black pepper.
  4. Toss sweet potatoes with half that mixture.
  5. Spread sweet potatoes out on a sheet pan and start to roast.
  6. Slice sausage into slices about 3/4 inch thick.
  7. When sweet potatoes have roasted 15 minutes, add sausage pieces to the sheet pan and roast 10 minutes more.
  8. Cut up broccoli into same-size pieces (about the size of the other ingredients.)
  9. Toss broccoli with the rest of the oil-balsamic mixture.
  10. Remove sheet pan from the oven and turn sausage pieces over. Then tuck broccoli pieces between sausage and sweet potatoes.
  11. Cook 15 minutes more, or until broccoli is done to your liking and sausages and sweet potatoes are nicely browned.
  12. Season with a little salt and fresh-ground black pepper and serve hot.

This will keep in the fridge for a day or two and reheats surprisingly well.

Roasted Sweet Potatoes, Sausage, and Broccoli Sheet Pan Meal

Roasted Sweet Potatoes, Sausage, and Broccoli Sheet Pan Meal is easy and tasty for a fall dinner.

Ingredients

  • 2 medium sweet potatoes, peeled and cut into medium-sized cubes
  • 3 T olive oil
  • 1 T balsamic vinegar
  • 1 tsp. garlic powder
  • fresh ground black pepper to taste
  • 1 pkg. (4 or 5 links) pre-cooked chicken, turkey, or pork sausage (about 14-16 oz. sausage)
  • 1 lb. broccoli, trimmed and cut apart to make about 3/4 pound broccoli pieces
  • salt and additional fresh-ground black pepper to taste

Instructions

  1. Preheat oven to 450F/230C and spray sheet pan with non-stick spray.
  2. Cut up two medium sweet potatoes into cubes that aren't too small. (I made cubes that were about one inch across.)
  3. Whisk together the olive oil, balsamic vinegar, garlic powder, and black pepper.
  4. Put sweet potato cubes into a bowl and toss with half the oil-balsamic mixture.
  5. Spread sweet potatoes out on a sheet pan, put pan in the oven, and start to roast for 15 minutes.
  6. Slice sausage into slices about 3/4 inch thick. (We trimmed off the ends so the sausage would have a flat end on both sides.)
  7. When sweet potatoes have roasted 15 minutes, add sausage pieces to the sheet pan and roast 10 minutes more.
  8. Cut up broccoli into same-size pieces (about the size of the other ingredients.)
  9. Put broccoli into the bowl and toss broccoli with the rest of the oil-balsamic mixture.
  10. Remove sheet pan from the oven and turn sausage pieces over. Then spread sausage and sweet potatoes apart and tuck broccoli pieces between them.
  11. Put sheet pan back in the oven and cook 15 minutes more, or until broccoli is done to your liking and sausages and sweet potatoes are nicely browned.
  12. Season with a little salt and fresh-ground black pepper and serve hot.

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
Roasted Sweet Potatoes, Sausage, and Broccoli Sheet Pan Meal is a great dish for low-glycemic diet plans, and for phase two or three of the South Beach Diet.   1. Can I use russet potatoes? If so, how long? 

    • Yes, you could certainly use that type of potato. I haven’t tried it that way and don’t cook potatoes much, but I bet Google can tell you if there is a difference in the cooking time for russet potatoes vs. sweet potatoes. Hope you enjoy!

  2. I don’t have a pan big enough to do everything at once, so I’m doing each ingredient separate. Every time I do it like that, the sweet potatoes are almost burning and setting off my fire alarm, but they’re not roasted thoroughly. This time I set the temp at 400 degrees, and my smoke detector still went off. What should I do?

    • There is no way for me to know for sure what you’re doing, but literally hundreds of people have commented on this recipe on Pinterest, and no one has mentioned this happening. There are some things I’d check. Are you sure your oven tempeature is okay? Some ovens cook much hotter than what the temperature says. Some brands of balsamic vinegar have a lot more sugar than others and the sugar might burn. Are you spraying the baking sheet with non-stick spray? If you don’t think either of those is the cause, I’d probably just lower the temperature a bit more and add sausage when you think sweet potatoes are about half done.

  3. Sounds so good! Do you think I could sub brussel sprouts for the broccoli (trying to avoid the store)? Would the timing change?

    • I like the idea of using brussels sprouts. I only have one sheet pan meal with Brussels sprouts and that recipe cooks them at 400F for 21-23 minutes. This recipe has a higher temperature, so it might be okay, or I might put the Brussels Sprouts in a few minutes earlier. Love to hear how it works!

      • It was really good with brussel sprouts! I put them in about 10 minutes after I put the sweet potatoes in… the only thing I would do differently next time is not spray the pan first, bc the olive oil/balsamic mix made the pan “non stick” enough. Overall, great recipe for a quick and easy meal! Thanks so much for sharing and giving quick replies to questions! 🙂

  4. This turned out great. I added a little maple syrup to the sauce for the potatoes. It added a tiny bit of sweetness that was great. Love easy one pan dishes like this.

  9. when you say roast, is the oven on bake or broil. sorry l am new at this.

    • No problem, glad I can help! Roast = bake.

      When you set the oven on broil, that’s cooking at very high heat from the top, usually just to brown things or cook meat quickly.

  10. I think I’m going to try subbing chunks of pumpkin for the sweet potato. I find it tastes similar when roasted in this way and it’s way lower in carb. I’ll report back if I try it.

  11. We love sheet pan dinners at our house, especially with yams, so this really caught my eye. Love that you toss with balsamic vinegar! I hadn’t thought of that. I like to sprinkle my yams with Tajin before roasting. Not carb-free but really delicious!
