I made this Asparagus and Radish Salad with Feta more than a month ago when I was infatuated with updating asparagus recipes and was buying several bunches of asparagus every week. And I should probably dedicate this recipe to my trainer Amy, because after I raved to her about how amazing the raw asparagus salad was, she waited weeks and weeks for me finally post the recipe!

Amy even found this asparagus salad on the blog after a few weeks and thought it was the one I’d been talking about, and if you like the combination of asparagus and Feta cheese, you might also like that salad that uses it in a salad with cooked asparagus.

If you’re skeptical about the idea of a salad with raw asparagus, nibble on a piece of asparagus the next time you’re prepping it to cook and I bet you’ll like the mild but pleasing flavor. I think it’s quite different from cooked asparagus, and the raw asparagus is delightfully crunchy, which I love in a salad ingredient.

I’ve had raw asparagus salads in restaurants, but it was a Raw Asparagus Salad with Peas, Feta, and Lemon made by my friend Donna that inspired this recipe. That’s the same Donna who gave me the recipe for Donna’s Low-Carb Breakfast Muffins, a breakfast muffin I’ve made over and over.

What inspired me to make a raw asparagus salad?

After I tasted my friend Donna’s salad I loved the idea of a salad with raw asparagus and Feta, but I didn’t want a high-carb ingredient like peas. Radishes were the perfect crunchy substitute for a pop of color, plus great flavor and very few carbs! This tasty raw asparagus salad comes together in minutes, and it’s been a hit with everyone I’ve made it for.

This Asparagus and Radish Salad with Feta stayed good in the fridge overnight and I think it will last a few days, although I bet you won’t end up with too much left over!

How to make Asparagus and Radish Salad with Feta:

  1. Trim both ends of radishes, and then cut them in half and slice into thick half-moon shapes.
  2. Grab one piece of asparagus by both ends and snap to see where the woody part ends, then trim the asparagus pieces to that size.
  3. Cut trimmed asparagus on the diagonal into short pieces.
  4. Slice enough green onions to make 1/2 cup sliced green onion.
  5. Cut Feta Cheese into slices and then cut into small cubes. (We loved the cubes of Feta, but you can also use crumbled Feta if you prefer.)
  6. Whisk together lemon juice, olive oil, and a little Spike Seasoning (affiliate link) or another all-purpose seasoning blend to make the dressing.
  7. Put the radish slices, asparagus pieces, and sliced green onion into a bowl and toss together with the dressing.
  8. Gently stir in the cubes of Feta Cheese.
  9. Season the salad with fresh-ground pepper and salt to taste (remember the Feta is pretty salty) and devour!
  10. I’m guessing this would keep in the fridge for a couple of days, although mine didn’t last nearly that long.
