I made this Raw Asparagus, Radish, and Feta Low-Carb Salad more than a month ago when I was infatuated with updating asparagus recipes and was buying several bunches of asparagus every week. And I should probably dedicate this recipe to my trainer Amy, because after I raved to her about how amazing the raw asparagus salad was, she waited weeks and weeks for me finally post the recipe! Amy even found this asparagus salad on the blog after a few weeks and thought it was the one I’d been talking about, and if you like asparagus and Feta cheese, you might like that salad too.

This is the first recipe I’ve posted with raw asparagus, and if you’re skeptical about that idea, nibble on a piece the next time you’re prepping asparagus to cook and I bet you’ll like the mild but pleasing flavor. I think it’s really quite different from cooked asparagus, and the raw asparagus is delightfully crunchy, which I love in a salad ingredient. I’ve had raw asparagus salads in restaurants, but it was my friend Donna’s Raw Asparagus Salad with Peas, Feta, and Lemon that inspired this recipe.

That’s the same friend named Donna who gave me the recipe for Donna’s Low-Carb High-Fiber Grain-Free Breakfast Muffins, a grab-and-go-breakfast muffin I’ve made over and over. And I loved the idea of a salad with raw asparagus and Feta, but I didn’t want a high-carb ingredient like peas. Radishes were the perfect low-carb substitute for a pop of color, plus great flavor and crunch! This tasty raw asparagus salad comes together in minutes, and it stayed good in the fridge overnight, although I bet you won’t end up with too much left over!

Trim both ends of the radishes, and then cut them in half and slice into thick half-moon shapes. Grab one piece of asparagus by both ends and snap to see where the woody part ends, then trim the asparagus pieces to that size. Cut trimmed asparagus on the diagonal into short pieces. Slice enough green onions to make 1/2 cup sliced green onion.

Cut Feta Cheese into slices and then cut into small cubes. (We loved the cubes of Feta, but you can also use crumbled Feta if you prefer.) Whisk together lemon juice, olive oil, and a little Spike Seasoning (or another all-purpose seasoning blend) to make the dressing.

Put the radish slices, asparagus pieces, and sliced green onion into a bowl and toss together with the dressing. Gently stir in the cubes of Feta Cheese.

Season the salad with fresh-ground pepper and salt to taste (remember the Feta is pretty salty) and devour! I’m guessing this would keep in the fridge for a couple of days, although mine didn’t last nearly that long.

Raw Asparagus, Radish, and Feta Low-Carb Salad

This Raw Asparagus, Radish, and Feta Low-Carb Salad was so crunchy and refreshing and if you like these flavors you might want to double the recipe!

Ingredients:

  • 2 cups of half-moon radish slices (about 8 oz.)
  • 2 cups raw asparagus pieces, cut into 1.5 inch lengths (about 8 oz.)
  • 4 oz. Feta cheese, cut into 1/2 inch cubes
  • 1/2 cup diagonally sliced green onion
  • 2 T lemon juice (see notes)
  • 3 T extra-virgin olive oil
  • 1 tsp. Spike Seasoning (or another all-purpose seasoning blend)
  • salt and fresh-ground black pepper to taste (remember the Feta is salty)

Directions:

  1. Trim the stem and root end of each radish, and then cut radishes in half lengthwise and slice into thick half-moon shapes (so each piece of radish is red on the outside edge.)
  2. Grab one piece of asparagus by both ends and snap the end off to see where the woody part is, then trim the asparagus pieces to that size. Cut trimmed asparagus on the diagonal into pieces about 1.5 inches long long.
  3. Slice enough green onions to make 1/2 cup sliced green onion.
  4. Slice Feta Cheese into thick slices and then cut into 1/2 inch cubes, or slightly smaller if you prefer. (We loved the cubes of Feta, but you can also use crumbled Feta if you prefer.)
  5. Whisk together lemon juice, olive oil, and a little Spike Seasoning (or another all-purpose seasoning blend) to make the dressing.
  6. Put the radish slices, asparagus pieces, and sliced green onion into a bowl and toss together with the dressing.
  7. Gently stir in the cubes of Feta Cheese.
  8. Season the salad with fresh-ground pepper and salt to taste.
  9. I’m guessing this would keep in the fridge for a couple of days, although mine didn’t last nearly that long.

Notes:

I used my fresh-frozen lemon juice for this recipe.
