Crockpot Sausage, Peppers, and Cannellini Bean Stew with Parmesan

I’m one of those people who can eat soup or stew all the time and never get tired of it, and sometimes my best recipes are inspired by things in the fridge that need to get used. In the case of this Crockpot Sausage, Peppers, and Cannellini Bean Stew with Parmesan, it was a red pepper and a green pepper hanging out in the crisper that provided the motivation for this crockpot stew with pepper, beans, and hot turkey Italian sausage. I ate this with a generous sprinkling of Parmesan cheese on a day when it was too cold to want to go anywhere, and it was a perfect lunch for a cold winter day.

Saute chopped onion, chopped red bell pepper, and chopped bell pepper in olive oil until they are starting to soften, then add to slow cooker. Squeeze turkey Italian Sausage out of the casing and brown in the same pan, adding a bit more olive oil if needed, then add sausage to slow cooker.

Add Cannellini beans, petite diced tomatoes, dried basil, dried oregano, ground fennel, black pepper and bay leaves to slow cooker. Pour 4 cups chicken stock over the other ingredients and stir to combine. Cook on high for about 4 hours or on low all day while you’re at work.

I cooked the stew on high for just a little over 4 hours and it was perfect. Serve hot, with plenty of parmesan cheese to sprinkle over the soup.

Crockpot Sausage, Peppers, and Cannellini Bean Stew with Parmesan

Make this Crockpot Sausage, Peppers, and Cannellini Bean Stew on the weekend and eat it all week!

Ingredients:

  • 2 medium onions, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 T olive oil, plus more for browning sausage if needed
  • 5 links hot Italian sausage (use turkey sausage for South Beach Diet)
  • 2 cans (15.5 oz) Cannellini beans, rinsed in cold water until no more foam appears (or use 3 cups cooked cannellini beans)
  • 2 cans (14.5 oz.) petite dice tomatoes
  • 1 tsp. dried basil
  • 1 tsp. dried Greek Oregano
  • 1 tsp. ground fennel
  • ground pepper to taste
    2-3 bay leaves
  • 4 cups homemade chicken stock(or use 2 cans chicken broth and add a little water to make 4 cups)
  • freshly grated parmesan cheese for serving

Directions:

  1. Chop onions, red bell pepper, and green bell pepper into pieces about 1/2 inch square.
  2. Heat olive oil in a large frying pan, then saute onions and peppers until they begin to soften, then add to slow cooker.
  3. Squeeze Italian sausage out of casings and add to frying pan, adding a bit more olive oil if needed.
  4. Brown sausage well, breaking apart with turner as it cooks, then add to slow cooker.
  5. Pour beans into a colander placed in the sink and rinse with cold water until no more foam appears, then add to slow cooker.
  6. Add tomatoes with juice, dried basil, dried oregano, ground fennel, black pepper and bay leaves to slow cooker.
  7. Pour homemade chicken stock over other ingredients and stir to combine.
  8. Cook on high about 4 hours or on low for all day.
  9. Serve hot, with freshly grated parmesan cheese for sprinkling on the stew.

  8. I've made this soup many times over the years. I got it out of a Pillsbury "One Pot Meal" book. The only addition for me is sliced zucchini and summer squash toward the end of cooking time. I'm glad to know that turkey Italian sausage is on the approved list for phase one.

  20. This sounded so yummy I just had to make it! I added some sliced celery and mushrooms to the veggies and then deglazed the pan with a bit of red wine because I had it in the fridge. I could only find whole fennel seeds but they softened up with the slow, low cooking and were totally delish. Unfortunately it didn't all fit into my crockpot but I have a huge frying pan that worked and I ended up cooking it on top of the stove for over an hour.   26. For getting the sausage out of the casing, I find it easier just to slice the casing–not all the way through the sauasage and then just peel it off. It's not as messy as trying to squeeze it out. Just did that this morning in fact! Re-making Kalyn's Sausage and Zucchini soup. I asked my sister to make some for me earlier this week when she was watching my kids, but she mistook the cucumbers for the zucchini and then I ended up accidentally leaving it out on the counter all night. But I really want it so I'm making it again!

  42. Sarah, it's a cinch; you just squeeze the sausage and it slides out the end where the casings aren't completely sealed. It's a little messy, but not hard at all.
