Salmon Tacos with Mexican Slaw are delicious, easy to make, and very low in carbs, and fish taco fans will love this recipe! We especially enjoyed them with a bit of extra slaw dressing to drizzle on the salmon.

There were a couple of things that aligned to help me create this new recipe for Salmon Tacos with Mexican Slaw! First, lately I’ve been loving the Mr. Tortilla 2 Net Carb Multigrain Tortillas and thinking how great those thin tortillas would be for tacos. Second, I had two extra large salmon fillets thawed out in the fridge with no idea for what to make with them. And third, I just happened to have all the ingredients in my fridge for my  Spicy Mexican Slaw, which I think is just so great for fish tacos.

After I had the idea of combining those ingredients, I was pretty sure the Salmon Tacos would be amazing, and when I made them with Kara to take these photos we absolutely loved them. We used the Air Fryer to cook the salmon in six minutes, which made this so quick and easy for a week-night meal, but I’ll give some links to other cooking methods for the salmon if you don’t have an Air Fryer. And no matter what method you use this will be a quick and easy dinner.

And besides using a new brand of low-carb tortillas, we also used Air Fryer Parchment Paper (affiliate link) for this recipe after a reader recommended it on the Kalyn’s Kitchen Facebook Page! This was a new product for both Kara and me, and it was a complete game-changer for keeping the Air Fryer basket clean. And I discovered that it comes in a variety of sizes and I was so excited to find there was a size for my Cuisinart Convection Air Fryer Toaster Oven (affiliate link) that has a larger basket!

If you like fish tacos at all I hope you’ll try this recipe! Whatever cooking method you use or which type of tortillas you prefer, I’m confident everyone who likes salmon is going to love this new recipe. I’m already planning to make it again soon, it was that good!

What ingredients do you need for this recipe?

How can you cook the salmon for the Salmon Tacos?

We used the Air Fryer to cook the salmon in six minutes, following the cooking instructions from the recipe for Air Fryer Salmon with Mustard-Herb Sauce. That worked perfectly, but if you don’t have an Air Fryer you can still make this recipe. Use instructions for grilled salmon or roasted salmon from my recipe for Maple Glazed Salmon, and that recipe also has Air Fryer instructions too if you want to compared all three methods. (Hint: all three are very quick and easy, FTW!)

Which Air Fryer did we use for this recipe?

I became a big Air Fryer fan after I discovered the Cuisinart Convection Air Fryer Toaster Oven (affiliate link) which is what I used for this recipe. This air fryer has a larger basket, which lets me fit four pieces of salmon, chicken, or pork chops, and I find this model very easy to use. I also like the convenience of having an air fryer that stays out on the counter. (You can use Air Fryer Recipes to see the other Air Fryer recipes on my site.)

What Low-Carb Tortillas did we like for Salmon Tacos?

I’m a long-time fan of Mission Carb Balance Whole Wheat Tortillas (affiliate link), and these Salmon Tacos would be delicious using those (or use another brand of low-carb tortilla if you have a favorite.) But once I tried the Mr. Tortilla 2 Net Carb Multigrain Tortillas (affiliate link), I became infatuated with the idea of making tacos with them. These tortillas are thin (similar in thickness to corn tortillas) and just the right size for a taco. And they heat really quickly on a hot skillet. And Kara and I both loved the flavor as well.

How to Make Salmon Tacos with Mexican Slaw:

(Scroll down to see complete printable recipe with nutritional information.)

  1. The salmon fillet I had was almost 16 ounces total. Let salmon thaw overnight in the fridge if frozen.
  2. Mix Szeged Fish Rub (affiliate link) or other fish seasoning, ground Cumin (affiliate link), and Chili Powder (affiliate. link). Rub salmon with olive oil and fish rub mixture.
  3. Let salmon come to room temperature while you thinly slice green and red cabbage and slice green onions for the slaw.
  4. Combine mayo, fresh-squeezed lime juice, Green Tabasco Sauce (affiliate link), and Vege-Sal (affiliate link) or regular salt to make the slaw dressing.
  5. Toss together cabbage and green onions; then toss that with about HALF of the dressing. Add cilantro (if using) and toss again.
  6. Save the rest of the dressing to drizzle on the salmon in the tacos, which we highly recommend even though it didn’t make it into these photos!
  7. The next photo shows the Air Fryer Parchment Paper (affiliate link) which Kara and I both loved.
  8. Lay the salmon on the parchment paper or directly in Air Fryer basket.
  9. We preheated the Air Fryer to 400F and cooked salmon 6 minutes without turning. See my recipe for Maple Glazed Salmon if you don’t have an Air fryer.
  10. These are the Mr. Tortilla 2 Net Carb Multigrain Tortillas that partly inspired this new recipe.
  11. While salmon cooks, heat each tortilla about 30-60 seconds in a dry hot pan, turning them once.
  12. Remove salmon from the Air Fryer, place in a bowl, and use a fork to shred apart.
  13. Assemble the Salmon Tacos by putting slaw and pieces of salmon in the hot tortillas.
  14. Serve right away, with extra slaw dressing to drizzle over the tacos (highly recommended) and/or fresh lime pieces to squeeze on at the table.

Make it a Low-Carb Meal

I definitely think Salmon Tacos with Mexican Slaw are perfect for a low-carb meal on their own! But if you want to add a side dish, I’d love this with Peperoncini Chopped Salad with Romaine, Peppers, and Feta, Cucumber Salad with Balsamic Dressing, Tomato Cucumber Avocado Salad, Avocado Tomato Salad, or Laurel’s Jicama Salad.

We swooned over these Salmon Tacos with Mexican Slaw, and we especially liked them with a bit of extra slaw dressing to drizzle over the salmon.

Ingredients

  • 16 oz. salmon fillet
  • 1 T olive oil
  • 1 1/2 tsp. Szeged Fish Rub
  • 1/2 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 6 low-carb tortillas (preferably Mr. Tortilla tortillas, see notes)
  • 2 cups thinly-sliced green cabbage
  • 1 cup thinly-sliced red cabbage
  • 3 green onions, thinly sliced
  • 1/4 cup chopped cilantro (optional, see notes)
  • 4 T mayo
  • 3 T fresh-squeezed lime juice
  • 1/2 tsp. Green Tabasco Sauce (or more)
  • Vege-sal or salt to taste

Instructions

  1. Let salmon thaw overnight in the fridge if frozen.
  2. Mix together the fish rub, ground cumin, and chili powder. Rub salmon on both sides with olive oil and the fish rub mixture.
  3. Then let salmon come to room temperature on the countertop while you make the slaw. Thinly slice green and red cabbage and slice green onions and chop cilantro if using.
  4. Combine mayo, fresh-squeezed lime juice, Green Tabasco Sauce, and Vege-Sal or salt to make the dressing.
  5. Toss together cabbage and green onions; then toss that with about HALF of the dressing. Stir in chopped cilantro if using and toss again.
  6. Save the rest to drizzle on the salmon in the tacos.
  7. Lay the salmon on the parchment paper or directly in the Air Fryer basket. We preheated the Air Fryer to 400F and cooked salmon 6 minutes without turning.
  8. If you want to cook the salmon on the grill or roast it in the oven, my recipe for Maple Glazed Salmon has good instructions for both those methods.
  9. While salmon cooks, heat each tortilla about 30-60 seconds in a dry hot pan, turning them once.
  10. Remove salmon from the Air Fryer, place in a bowl, and use a fork to shred apart.
  11. Assemble Salmon Tacos by putting slaw and pieces of salmon in the hot tortillas.
  12. Serve right away, with extra slaw dressing to drizzle over the tacos (highly recommended) and/or fresh lime pieces to squeeze on at the table.

Notes

If you don't want to use cilantro, I would use 1-2 more sliced green onions.
