Here’s a great collection of Favorite Salads with Beans that are all just so tasty! And I think most people who like dried beans love salads that use them, right? You can cook beans in the slow cooker or Instant Pot (or on the stove) to make the bean salads. Or make it easy and use rinsed and drained canned beans in these recipes. And I know that lentils are legumes and not beans, but I had to include a few salads with lentils here too.

Beans have fiber to reduce the net carbs, but I’m guessing some readers who eat strictly low carb aren’t going to want to make bean salads. Why am I sharing salads with beans?

My love for dried beans got started when I was following the original South Beach Diet. In that plan beans were considered a “good carb” and South Beach encouraged you to eat them daily. Now that I’m following a more carb-conscious eating plan, they’re more of a carb splurge! But most of my bean salads have been updated so they combine beans with protein or low-carb vegetables to keep the carbs relatively low.

Are the Bean Salad Recipes Vegetarian?

I’m not tagging this round-up vegetarian, because there are are some salad recipes here with tuna or shrimp. But if you want vegetarian salads with beans there are lots of options here!
