Low-Carb Gluten-Free Almond Flour Savory Bread started out the way many of my Kalyn’s Kitchen favorite recipes do – with an idea from a reader! In February a reader named Karen left a comment on my recipe for Flourless Egg and Cottage Cheese Savory Breakfast Muffins saying she enjoyed making the recipe as a loaf of bread. She gave me her cooking temperature and told me to be sure to spray the loaf pan well, and I couldn’t wait to try it.

But if you know me at all you’ll realize I’d want to experiment with the recipe just a bit, and when I tried making this almond flour bread with Kara we made it a couple of times, tweaking it each time until we thought the flavor was amazing. We divided up the leftovers of our final version, and I ate my share for breakfast for a few days in a row, warming it in the microwave and spreading some butter on.

But even though I did really enjoy it for breakfast, I want to emphasize that this is not just a breakfast bread! I’d love it toasted and dipped into soup, which is one of the things I miss about not eating much regular bread these days. Steps for Making Low-Carb Gluten-Free Almond Flour Savory Bread:

  1. Rinse cottage cheese well with cold water, then let it drain.
  2. Preheat oven and spray loaf pan with non-stick cooking spray.
  3. Mix together Almond Flour (affiliate link), Hemp Seeds (affiliate link), Parmesan cheese, Flaxseed Meal (affiliate link), baking powder, Spike Seasoning (affiliate link), and salt.
  4. Beat eggs, then mix in the rinsed cottage cheese.
  5. Thinly slice 1/3 cup green onions.
  6. Mix eggs and green onions into the dry ingredients, stir to combine, and transfer the batter to the loaf pan.
  7. Bake about 55 minutes, or until the top of the bread is firm and browned, and a toothpick comes out clean.
  8. This bread can be sliced and frozen, and reheats well, although don’t heat it too long or it will get hard.

Low-Carb Gluten-Free Almond Flour Savory Bread

Low-Carb Gluten-Free Almond Flour Savory Bread is a recipe you’ll make over and over!

Ingredients:

  • 3/4 cup almond flour
  • 1/2 cup hemp seeds (sometimes called hemp hearts)
  • 3/4 cup coarsely grated Parmesan cheese
  • 1/4 cup flaxseed meal
  • 1/2 tsp. baking powder
  • 1 tsp. Spike Seasoning (recommended, but use any all-purpose seasoning blend if you don’t have Spike)
  • 1/4 tsp. salt (we used kosher salt)
  • 6 eggs, beaten well
  • 1/2 cup cottage cheese, rinsed and drained
  • 1/3 cup thinly sliced green onion

Directions:

  1. Put cottage cheese into a fine-mesh strainer placed in the sink, rinse cottage cheese well with cold water, then let it drain.
  2. Preheat oven to 325F/165C and spray loaf pan with non-stick cooking spray. (I used a 9 inch x 5 inch loaf pan –  affiliate link.)
  3. Mix together Almond Flour (affiliate link), Hemp Seeds (affiliate link), Parmesan cheese, Flaxseed Meal (affiliate link), baking powder, Spike Seasoning (affiliate link), and salt.
  4. Beat eggs until the yolks and whites are completely combined, then mix in the rinsed cottage cheese.
  5. Thinly slice 1/3 cup green onions.
  6. Mix eggs and green onions into the dry ingredients, stir to combine ingredients well, and transfer the batter to the loaf pan.
  7. Bake about 55 minutes, or until the top of the bread is firm and nicely browned, and a toothpick comes out clean when you test.
  8. This bread can be sliced and frozen, and reheats well, although don’t heat it too long or it will get hard.

  1. Could you include the size of the bread loaf pan? Seems most keto bread use smaller pans and the size seems very important.
