Savory Almond Flour Bread started out the way many of my Kalyn’s Kitchen favorite recipes do with an idea from a reader! In February a reader named Karen left a comment on my recipe for Flourless Savory Breakfast Muffins saying she enjoyed making the recipe as a loaf of bread. She gave me her cooking temperature and told me to be sure to spray the loaf pan well, and I couldn’t wait to try it.
But of course regular readers will know that I’d experiment with the recipe just a bit, and when I tried making this almond flour bread with Kara we made it a couple of times, tweaking it each time until we thought the flavor was amazing. We divided up the leftovers of our final version, and I ate my share for breakfast for a few days in a row, toasting the bread and spreading some butter on.
But even though I did really enjoy the almond flour bread for breakfast, I want to emphasize that this is not just a breakfast bread! I love it slightly toasted and dipped into soup, which is one of the ways I miss eating regular bread. Try this easy low-carb bread recipe and see what you think!

What hemp seeds did I use for the almond flour bread?
There are many brands of hemp seeds, and all add a nutty flavor and add a nice texture to baked goods. But I am partial to a brand called Hemp Hearts (affiliate link) which is what I used for this recipe.
What size loaf pan did I use for this recipe?
I used a 9 inch x 5 inch loaf pan (affiliate link) for this recipe, but I think a slightly smaller size would work.

Steps for making Savory Almond Flour Bread:

- Rinse cottage cheese well with cold water, then let it drain.
- Preheat oven and spray loaf pan with non-stick cooking spray.
- Mix together Almond Flour (affiliate link), Hemp Seeds (affiliate link), Parmesan cheese, Flaxseed Meal (affiliate link), baking powder, Spike Seasoning (affiliate link), and salt.
- Beat eggs, then mix in the rinsed cottage cheese.
- Thinly slice 1/3 cup green onions.
- Mix eggs and green onions into the dry ingredients, stir to combine, and transfer the batter to the loaf pan.
- Bake about 60 minutes, or until the top of the bread is firm and browned, and a toothpick comes out clean.
- This bread can be sliced and frozen. It’s great toasted and eaten with a little butter.
- Serve hot, with butter or your favorite thing to spread on warm bread!

Savory Almond Flour Bread is a tasty low-carb, Keto, and gluten-free bread recipe you'll make over and over!
Ingredients
- 3/4 cup almond flour
- 1/2 cup hemp seeds (see notes)
- 3/4 cup coarsely grated Parmesan cheese
- 1/4 cup flaxseed meal
- 1 tsp. baking powder
- 1 tsp. Spike Seasoning (see notes)
- 1/4 tsp. kosher salt (see notes)
- 6 eggs, beaten well
- 1/2 cup cottage cheese, rinsed and drained
- 1/3 cup thinly sliced green onion
Instructions
- Put cottage cheese into a fine-mesh strainer placed in the sink, rinse cottage cheese well with cold water, then let it drain.
- Preheat oven to 325F/165C and spray loaf pan with non-stick cooking spray. (I used a 9 inch x 5 inch loaf pan - affiliate link.)
- Mix together Almond Flour (affiliate link), Hemp Seeds (affiliate link), Parmesan cheese, Flaxseed Meal (affiliate link), baking powder, Spike Seasoning (affiliate link), and salt.
- Beat eggs until the yolks and whites are completely combined, then mix in the rinsed cottage cheese.
- Thinly slice 1/3 cup green onions.
- Mix eggs and green onions into the dry ingredients, stir to combine ingredients well, and transfer the batter to the loaf pan.
- Bake about 55-60 minutes, or until the top of the bread is firm and nicely browned, and a toothpick comes out clean when you test.
- This bread can be sliced and frozen. It is great eaten toasted.
Notes
Hemp seeds are sometimes called hemp hearts.
Spike Seasoning is recommended, but use any all-purpose seasoning blend if you don't have Spike.
We used kosher salt; use slightly less for regular salt.

This looks excellent! ย Do you know of a dairy free option for the cottage cheese? Dairy causes sinus issues for me. Maybe shredded tofu?
I wish I could help but I’ve never made these without cottage cheese and I am not a good enough baker to know what else would work without trying it. If you find something that works I’d love to know about it!
I really like the texture and taste of this bread. I had a really hard time getting mine out of the pan with using only cooking spray. Iโd suggest both cooking spray and lining the bottom with parchment paper. I can now have Avocado Toast once again!!! ๐

Could you include the size of the bread loaf pan? Seems most keto bread use smaller pans and the size seems very important.
This is a standard size bread pan, approximately 9 inches long x 5 inches wide x 3″ inches deep. I will add that to the recipe.
