This Instant Pot Hamburger Soup was inspired by a tasty soup with ground beef and barley back in the archives. That soup used to be one of my favorites when I wasn’t thinking much about carbs. But now I’d prefer this new version of hamburger soup that adds cauliflower rice for flavor and texture. The ground beef and cauliflower get a flavor boost from celery, garlic, parsley, thyme, onion powder, Worcestershire sauce, and a splash of balsamic vinegar added at the end. And we used frozen cauliflower rice to make it easy.

And both of these recipes are a simple soup to make when you have ground beef thawed out in the fridge and just want something that’s warm and comforting. We enjoyed the Instant Pot Hamburger Soup with a sprinkle of Parmesan cheese added at the table. But you can omit that if you want a dairy-free soup. And however you adapt this soup recipe to suit your tastebuds, I hope you try it to welcome the new year!

How to make Instant Pot Hamburger Soup without Worcestershire Sauce:

I’m guessing Worcestershire Sauce might be an ingredient some people don’t keep on hand. If you’d like to make this tasty soup without buying that, I’d replace it with soy sauce.

How to Make Instant Pot Hamburger Soup (with Cauliflower):

  1. Chop onion and celery and measure out minced garlic.
  2. Heat olive oil in the Instant Pot on SAUTE, HIGH HEAT, add ground beef and cook until it’s nicely browned, breaking apart with a plastic or wooden turner as it cooks.
  3. When the meat is browned, drain excess fat if needed and season with salt and fresh ground black pepper.
  4. Then push browned meat over to the side, add another teaspoon of olive oil if needed, and add the chopped onion and celery.
  5. Cook 3-4 minutes, then add the Minced Garlic and cook a minute or two more.
  6. Mix the barely-cooked onion/celery mixture into the ground beef.
  7. Add Dried Parsley, Dried Thyme, Onion Powder, Worcestershire Sauce, beef broth, vegetable broth, and 1 cup frozen cauliflower rice to the pot.
  8. Lock the lid and set the Instant Pot to MANUAL, HIGH PRESSURE, 10 minutes.
  9. When done, let the pot natural release (or natural release 10 minutes and then release the rest of the pressure if you prefer.
  10. Turn the IP settings back to SAUTE, MEDIUM HEAT, add two more cups cauliflower rice and let the soup simmer until the newly-added cauliflower rice is cooked, about 10-12 minutes. (By now the first cauliflower rice will be mostly dissolved, thickening the soup.)
  11. Stir in 1-2 T balsamic vinegar (or any flavorful vinegar will work) and taste to see if you want more salt and/or fresh ground black pepper.
  12. Serve Instant Pot Cauliflower Soup hot, with plenty of freshly-grated Parmesan cheese to add at the table!

Instant Pot Hamburger Soup is an easy comforting soup with ground beef and cauliflower rice, plus soup ingredients you might already have on hand! And if you're someone who grew up eating soup with ground beef, you might love this soup that's low in carbs and gluten-free!

Ingredients

  • 1 T olive oil (plus a little more if needed)
  • 1 lb. ground beef
  • 1 medium onion, chopped small
  • 1 cup chopped celery
  • 2 T minced garlic (minced garlic from a jar is fine for this)
  • 1 tsp. kosher salt
  • fresh-ground black pepper to taste
  • 2 T dried parsley
  • 2 tsp. dried thyme
  • 1 tsp. onion powder
  • 2 T Worcestershire Sauce (see notes for gluten-free)
  • 3 cans (14 oz. size) beef broth
  • 1 can (14 oz. size) vegetable broth
  • 3 cups frozen cauliflower rice (divided)
  • 2 T balsamic vinegar (or other flavorful vinegar of your choice)

Instructions

  1. Chop one cup each of onion and celery and measure out 2 tablespoons minced garlic (or chop fresh garlic if you prefer.)
  2. Heat 1 tablespoon olive oil in the Instant Pot (affiliate link) on SAUTE, HIGH HEAT, add the ground beef and cook until it's nicely browned, breaking apart with a plastic or wooden turner as it cooks. (Don't use a metal turner. which might scratch the pot.) I used lean ground beef so I didn't need to drain any fat, but drain some fat from the pot if needed when the beef is browned.
  3. Season the browned meat with salt and fresh ground black pepper, push it over to the side, add another teaspoon of olive oil if needed, and add the chopped onion and celery. Cook 3-4 minutes, then add the minced garlic and cook a minute or two more. Mix the barely-cooked onion/celery mixture into the ground beef.
  4. Add dried parsley, dried thyme, onion powder, Worcestershire Sauce (affiliate link), beef broth, vegetable broth, and 1 cup frozen cauliflower rice to the pot. Lock the lid and set the Instant Pot to MANUAL, HIGH PRESSURE, 10 minutes. After cooking time is up, let the pot natural release (or natural release 10 minutes and then release the rest of the pressure if you want it to go a bit faster.)
  5. Turn the IP settings back to SAUTE, MEDIUM HEAT, add two more cups cauliflower rice and let the soup simmer until the newly-added cauliflower rice is cooked, about 10-12 minutes. (By now the first cauliflower rice you added will be mostly dissolved, thickening the soup.)
  6. Stir in 2 T balsamic vinegar (or any flavorful vinegar will work), and taste to see if you want more salt and/or fresh ground black pepper.
  7. Serve Instant Pot Hamburger Soup hot, with freshly-grated Parmesan cheese to add at the table if desired.

Notes

Use gluten-free Worcestershire Sauce (affiliate link) if needed. If you don't want to buy Worcestershire Sauce you can use soy sauce.
