Friday Night Photos: Two Thumbs Up for New Red Iguana Location in Salt Lake City!

Red Iguana Chips and SalsaIt was nearly four years ago when I first acknowledged my love for Salt Lake City’s Red Iguana Restaurant in a post on the blog. Then a few weeks ago I was excited to hear that Red Iguana 2 was opening, literally blocks away from the original location. Now you can go to one Red Iguana and if it’s standing-room-only with people waiting for tables, it’s a 5 minute drive to the other location. I think that plan was a stroke of marketing genius on the part of Lucy Cardenas, the personable and charming owner of the Red Iguanas. I’ve been to the new Red Iguana several times since it opened, and I love the new Red Iguana 2 just as much as the original one. It’s been a while since I shared restaurant photos for Friday Night Photos, but these are some of the dishes that make eating at the Red Iguana always so memorable.

Even though you may be too polite to ask, I know some readers might be wondering, “What would a woman who’s pretty committed to the South Beach Diet eat at a place like the Red Iguana?” Truthfully, there probably isn’t anything on the menu that’s 100% South Beach Diet friendly, but if you use some restraint you can have a great Red Iguana meal without doing too much damage. Start by skipping the chips and salsa, and ordering your dinner without rice. Feel free to enjoy the Red Iguana’s amazingly creamy refried beans, which don’t contain lard, and order one of the meals that’s mostly protein or vegetables. The two things I order most often here are the Chile Verde Plate (without rice) or the Carnitas (without the tortillas.) Red Iguana chile verde does contain a bit of flour to thicken the sauce, but the simmered spicy chunks of pork with refried beans is still a pretty low-glycemic meal. As for the Red Iguana carnitas, there’s no doubt that they’re a little high in fat for the South Beach Diet guidelines, but they come with refried beans, guacamole, and pico de gallo, all of which are good choices.

I also believe that the best diet is the one you can strictly follow most of the time, but ignore completely for a special occasion, like when family members are in town for Christmas. Of course, I didn’t eat all the food that’s pictured here, but no matter what I order when I visit the Red Iguana, I always enjoy the meal. I’m not 100% sure I remember what’s in each of these photos, taken over a series of visits, but I’m guessing that inquiring minds want to know so I’ll try to label them.

  1. Lisa, so glad you got to try The Red Iguana. Both locations seem to have exactly the same food from what I can tell. Love the Red Iguana!

  2. Kalyn, Keith and I ate there week before last when we were in Park City, and O. M. G. !!! So amazingly delicious. I love the place (we went to the original location), and I wish I lived close so I could try everything. I had the top sirloin tips w/the almond mole (puntas de filete a la nortena) — wowie.

    You are SO lucky to live near Red Iguana!


  3. I heartily endorse the Red Iguana moles as well. They are outstanding! You can get a number of their moles as dinners without tortillas which make them South Beach friendly. I haven't tried the Red Iguana 2 location yet. I'm glad to know that it lives up to the reputation of the first.

  7. Anonymous, I agree, the moles at the Red Iguana are perfect. When I take someone there for the first time, I love to get the little "mole sampler" plate and let them try all the different ones.

    Anne, I know what you mean about the chips being hard to resist, but actually my very favorite thing here (that I could NOT resist) is the refried beans, and luckily they're diet friendly. I've gone there many times and had Chile Verde or Carnitas with beans (no rice or chips) and still felt very satisfied.

    Bruno, you MUST call me when you're having a layover that's long enough and we'll go together.

    Karina, how I wish you could have mole or carnitas too! I agree that there is nothing healthy at all about always feeling deprived. If I couldn't eat something once in a while just for the pure enjoyment of it, I could never stick to this way of eating.

  8. What I wouldn't give for a good mole. And carnitas? Si, por favor. And I totally agree with you regarding diet guidelines. Life requires us to be flexible. If we stay too rigid we feel deprived. Deprivation isn't self care. It's all about balance, in the end, isn't it?

  10. OHHHHHH MAN. I absolutely love Red Iguana. Their mole is to die for. We go there every time I visit Donna – and I will be there again in just 2 weeks!

    But I dunno, I'm still trying to be pretty by the book here. I can skip the rice, and even the tortillas (can't do flour anyway, only the corn ones), but no chips and salsa?! *cry*

    Anyway, I second/third the ringing endorsement. Glad to know about the new location, even if my level of willpower means I'm better off skipping it this trip.

  11. I love their moles. Enchiladas verdes (chicken enchiladas with the green mole sauce) is my standard Red Iguana dinner!
