How to Make Bacon Cheeseburger Keto Breakfast Quiche:

- Preheat over to 350F/175C.
- Cook thick bacon until crisp, then crumble into the bottom of your pan, saving a little bacon to sprinkle on the top.
- In the same frying pan, cook one pound of ground beef until it’s well-browned. (You can remove some bacon fat if it seems like too much, but use some bacon fat to cook the ground beef.)
- While beef cooks, finely chop up 1/2 an onion and 1/4 cup finely diced dill pickles.
- Put the cooked ground beef over the bacon and sprinkle the onion and pickles over the beef.
- Sprinkle one cup (or more) of grated cheese over the other ingredients.
- Beat 8 eggs with cream or half and half, then pour that over the ingredients and gently “stir” with a fork.
- Season eggs with salt and fresh ground black pepper to taste, but remember bacon is salty.
- Sprinkle the reserved bacon and the other 1/4 cup grated cheese over the top.
- Bake 35-45 minutes, or until the quiche is completely set, cheese is melted and the top is nicely browned.
- Serve the Keto Breakfast Quiche hot and enjoy! And this is also tasty for lunch or dinner.

We used a blend of cheeses but any cheese that would be good on a bacon cheeseburger will work. Use a little more cheese if you prefer.
Use half and half instead of heavy cream if you prefer.

I will try the pickles…do you think this would work in muffin cups? Not sure about cooking times…
Yes, I think it will work in muffin cups for what I call “egg muffins.” The cooking time will be slightly less, I would start checking them after about 25 minutes.
Super great! This makes enough for two quiches once I add my required spinach and broccoli. I cook 3/4 cups of chopped broccoli with the beef, onions, and pickles. I tear up the raw spinach leaves (1.5 cups per quiche or 3 cups total) and put in the bottom with the bacon.

Would this work in 8โ or 8×11โ ย square Pyrex dish? If so, what temp and how long?
I really can’t say for sure how it will work or what cooking time would be in a size of dish I haven’t made it in. But if I was going to guess, I think an 8 inch square dish will make it too thick. I would suggest trying the 8″11 dish and cooking at the same temperature. I don’t think the cooking time will be much different but I’d start to check after 30 minutes.
I made this last night. The family really enjoyed it! My husband had seconds! I made it exactly as directed and was very happy with the results. I will definitely it again but it needs a bit of seasoning. People can add what they like, salt and pepper anyway. I sliced into it at the 35 minute mark, the eggs were still quite runny so I let it go for another 10 minutes. I think I added in more than 1 lbs of ground beef so that’s probably why it needed the longer cooking time. Great recipe and this will be in our menu regularly. Thanks so much!

This recipe hit the spot for me and my usually reluctant husband. Itโs great for being a quick morning breakfast, which includes the meat, giving you no need to make a side of bacon or sausage. The pickles are an important addition. Next time Iโll put more in it. Love the flavor. This is one of my favs.

Honestly I don’t like pickles that much so I would just omit them if I made this. Nonetheless this looks delicious! I would make it if I didn’t have dairy sensitivities unless you can suggest a substitution for cheese (I would substitute the heavy cream with coconut cream, but that might taste different).

Yes, it’s not working for me either. Their system has been a bit wonky lately, but they told me they were fixing it. I will let them know but there is nothing else I can do about it. I will tell you that it should work on the recipes that have been on the site for a while. It’s the most recent ones that haven’t been working right.
I suspect the dill pickles and bacon ย are what makes this recipe taste like a bacon cheeseburger, otherwise it would just be a ground beef and bacon quiche. I havenโt had a bad recipe on this site yet (thank you, Kalyn!!) so Iโm going to have faith and try it just as written. I have a sneaking suspicion that this is going to be fabulous just like all the other ones Iโve tried! Iโll keep you posted!

I was right there with you until the pickles. Not sure about the pickles. I’d cook the onions in with the ground beef, because of my own aversion to onions that are not really well cooked, but otherwise, I’m going to agree that everyone loves bacon cheeseburgers, so why not give it a try?
Lydia, cooking the onions is perfect for you. The pickles are small and they’re pretty soft and well cooked by the time it’s done. Just a little pickle flavor!
