I woke up this morning wishing I still had leftovers from this Pork Lover’s Breakfast Casserole in the fridge and then realizing that I’d better share this recipe right away so you can make this tasty breakfast casserole before it’s too hot to use the oven. Plus, when we tested the recipe recently I shared a quick pic on the Kalyn’s Kitchen Facebook page, and a lot of you were asking for the recipe! 

And this recipe is great for Keto, but even if you don’t care at all about that if you like bacon, ham, and breakfast sausage I’m betting you’ll love this breakfast casserole combination.

I came up with the recipe when my sister Laurel and her husband Carl were staying with me and I hadn’t planned ahead for breakfast.We pulled breakfast meat out of the fridge and ended up with this combination, and when I realized how good it was I jotted down the recipe in my little notebook where I write blog recipe ideas. Later Laurel wrote “It’s delicious and amazing said one house guest” next to my note so I knew the recipe was a keeper!

How to Make Pork Lover’s Breakfast Casserole:

  1. Dice the ham steak into small cubes, and chop the pre-cooked bacon (or bacon) and pork sausage patties.
  2. Cook the bacon over medium-high heat, just until it’s crisp; then put the bacon in the bottom of the casserole dish.
  3. If you started with raw bacon, drain any extra fat in the pan, then add the chopped pork sausage and cook until it’s starting to brown.
  4. Put the sausage in the casserole dish.
  5. Then add the cubes of diced ham.
  6. Layer the grated cheese over the meat and season with Spike Seasoning (affiliate link) or another all-purpose seasoning and fresh ground black pepper. Then add the thinly sliced green onions.
  7. Beat the eggs until whites and yolks are well-combined, then pour over the meat-cheese mixture.
  8. I like to take a fork and gently stir, then sprinkle a couple tablespoons more cheese over the top.
  9. Bake at 375F/190C until the casserole is firm and starting to slightly brown on top.
  10. Serve hot. This is delicious with a little sour cream on top, and some of our recipe testers also liked it with salsa!

If you like bacon, ham, and breakfast sausage you're going to love this Pork Lover's Breakfast Casserole whether or not you're following a Ketogenic diet! And this is perfect to make on the weekend and eat leftovers during the week.

Ingredients

  • 8 slices pre-cooked bacon, cut into pieces and browned in a frying pan. (You can use raw bacon but you'll have to cook it a bit longer.)
  • 8 pork sausage patties (10 oz. total) cut into pieces and browned in a frying pan.
  • one large ham steak (1 lb.) cut into cubes about 1/2 inch square
  • 2 cups grated Mozzarella cheese
  • 1 tsp. Spike Seasoning (or use another all-purpose seasoning blend)
  • fresh ground black pepper to taste
  • 1/2 cup green onions, thinly sliced
  • 12 eggs, well beaten so the whites and eggs are completely combined. (see notes)

Instructions

  1. Preheat oven to 375F/190C. Spray a large casserole dish with non-stick spray. (I used an oval dish that was 13" long and 10" wide at the widest part, so any casserole dish that's about 9" x 13" would be perfect.)
  2. Dice the ham steak into small cubes about 1/2 inch square and chop the pre-cooked bacon (or raw bacon) and pork sausage patties into small pieces.
  3. Heat a large frying pan over medium-high heat and cook the bacon just until it's crisp; then put the bacon in the bottom of the casserole dish.
  4. If you started with raw bacon, drain any extra fat in the pan, then add the chopped pork sausage and cook until it's starting to brown. Put the sausage in the casserole dish.
  5. Add the cubes of diced ham to the casserole dish over the bacon and sausage.
  6. Layer the grated cheese over the meat (reserving a few tablespoons of cheese for the top if desired).
  7. Season with Spike Seasoning (affiliate link) (or another all-purpose seasoning) and fresh ground black pepper. Then add the thinly sliced green onions.
  8. Beat the eggs until whites and yolks are well-combined, then pour over the meat-cheese mixture.
  9. I like to take a fork and gently stir, then sprinkle a couple tablespoons more cheese over the top.
  10. Bake at 375F/190C until the casserole is firm and starting to slightly brown on top.
  11. Serve hot. This can be kept in fridge for about a week and can be reheated in the microwave or in a pan on the stove.

Notes

If you prefer a more eggy casserole you can add a few more eggs.
