Normally I wouldn’t start off the month of June with a new recipe that cooks in the oven, but at my house diced green chiles are something that’s always in the pantry, which is one reason Green Chile and Cheese Egg Muffins are something I make for breakfast regularly.

So when the idea for this Cheesy Green Chile Breakfast Casserole popped into my head, I had to try it. And it was so tasty I decided that even though we’re almost in that don’t-turn-on-the-oven time of year, people might still make this for a breakfast dish if they usually have these ingredients on hand like I do! And this is ultra-easy, with no ingredients that need to be pre-cooked and only green onions to be chopped.

I used plenty of rinsed cottage cheese combined with a Cheddar-Jack Cheese blend so this breakfast casserole is high in protein and pretty cheesy. I know people doing Keto always like that, but you can certainly use a bit less cheese if you prefer. I loved this with some sour cream and Green Tabasco Sauce (affiliate link) added at the table, but no matter what you eat it with I think anyone who likes green chiles and cheese is going to like this for breakfast.

Is the Green Chile Breakfast Casserole very spicy?

I did use a large can of diced green chiles for this recipe which I thought made it moderately spicy, but you can use a smaller size can of chiles if you want less heat.

Can the Green Chile Breakfast Casserole be reheated?

This recipe makes eight servings and it will keep in the fridge for several days and can be reheated in the microwave, so it’s perfect to make for Weekend Food Prep and eat for a few days, which is exactly what I did!

Does the cheesy breakfast casserole taste like cottage cheese?

I know some people are not fans of cottage cheese. But in this Cheesy Green Chile Breakfast Casserole the cottage cheese adds extra creaminess and so much protein! And I promise you, this does NOT taste like cottage cheese.

How to make Cheesy Green Chile Breakfast Casserole:

  1. Preheat oven and spray a large casserole dish with non-stick spray. 
  2. Put the cottage cheese into a strainer and rinse, then let it drain. (See notes in the recipe about why rinsing the cottage cheese is important!)
  3. While cottage cheese drains, beat the eggs well and thinly slice the green onions
  4. Put drained cottage cheese into the bottom of the casserole dish.
  5. Then add the diced green chiles (affiliate link), 2 cups of the Cheddar-Jack cheese, sliced green onions, Spike Seasoning (affiliate link) or another all-purpose seasoning blend and a little salt and fresh-ground black pepper.
  6. Use a fork to gently “stir” so ingredients are well combined. Then add  eggs and “stir” again.
  7. Top the casserole with another 3/4 cup grated Cheddar-Jack cheese. 
  8. Bake 40 minutes, or until the eggs are firm and the top is starting to brown. (If you use a shallower baking dish the cooking time might be a little shorter.
  9. Serve hot, garnished with sliced green onions if desired.
  10. This is great with sour cream added at the table, and I like a dash of Green Tabasco Sauce (affiliate link) on mine.

If you always have canned green chiles in the pantry, this Cheesy Green Chile Breakfast Casserole is perfect for a tasty and easy breakfast idea! And this tasty breakfast casserole is extra low in carbs, loaded with cheese, and gluten-free!

Ingredients

  • 1 1/2 cups cottage cheese
  • 16 eggs
  • one 7 oz. can diced green chiles (see notes)
  • 2 3/4 cups grated Cheddar-Jack cheese (see notes)
  • 1 bunch green onions (or more)
  • 1 tsp. Spike Seasoning (see notes)
  • salt and fresh-ground black pepper to taste

Instructions

  1. Preheat oven to 375F/190C and spray a large casserole dish with non-stick spray. (I used a casserole dish that was 8 inches x 12 inches and 3 inches deep. A regular 9 inch x 13 inch casserole would also be great.)
  2. Put the cottage cheese into a strainer and rinse, then let it drain. (People are always asking me if the cottage cheese really has to be rinsed, but when I experimented the first time without rinsing the cottage cheese, the breakfast casserole was too moist and the top got too brown before it was cooked in the center. So I recommend rinsing it!)
  3. While cottage cheese drains, beat the eggs well.
  4. Thinly slice the green onions. (Save a few tablespoons of sliced green onions to garnish the top.)
  5. Put drained cottage cheese into the bottom of the casserole dish.
  6. Then add the diced green chiles (affiliate link), 2 cups of the Cheddar-Jack cheese, sliced green onions, Spike Seasoning (affiliate link) or another all-purpose seasoning blend, and a little salt and fresh-ground black pepper.

Notes

Diced green chiles (affiliate link) are the slightly-spicy Anaheim chiles, but use a 4 oz. can if you want less heat.

Any blend of grated cheese will work for this recipe, and Mexican Blend will be especially good. And of course you can use less cheese if you prefer!
