We’re in prime summer garden season in Utah, and zucchini recipes have been getting the spotlight. But another veggie that’s abundant during summer garden season is eggplant, and I’ve been a huge eggplant fan ever since I started growing it in my garden. I’m especially fond of grilled eggplant, but through the years I’ve also made roasted eggplant dishes and eggplant stir-fries that got gobbled up pretty quickly!

Julia Child’s Eggplant Pizza is a recipe that’s been hugely popular.
Grilled Spicy Eggplant is a huge favorite of my brother Rand, and you could cook this on a stove-top grilling pan when it’s not grilling weather.

I am an English eggplant fan but find most recipes too sloppy. I am in awe of these eggplant recipes and can’t wait to try them. I have dreamed of shredding the eggplants to add to recipes but can’t quite work out how to use this method.
I really hope you enjoy the recipes. I’m a fan of grilled eggplant or roasted eggplant, which evaporates some of the moisture.

It’s actually very good with lots of raw veggies: carrots, celery, cauliflower, bell peppers, sugar snap peas, etc. And while baba ghanouj is very similar to hummus, the chickpeas that make up the body of hummus are higher in carbs than the eggplant used for baba ghanouj. So a platter of veggies with a bowl of baba ghanouj makes a pretty good low-carb appetizer, I think.
Sounds like I need to try it.
What about Baba Ghanouj? That’s the eggplant recipe that won over my family.
Yes, that’s a popular recipe using eggplant for sure. This is focused on low-carb recipes and that’s usually eaten with Pita Bread, so that’s probably why I didn’t come across a low-carb version of it. But I bet it would be good dipped with cauliflower!
Welllll, I am guilty of not really "trying" eggplant. In the last year and 1/2 I have had to drastically change my (and my families) diet. I am gluten and dairy free, plus I have to avoid acidic foods. I tell people, be careful of what you pray for. 🙂 I think I may have to try a couple of these recipes as a co-worker brought me in some beautiful eggplants from her garden. I will let you know how it goes Kalyn! Thanks for sharing!

Hello, hope my question gets to you. I made eggplant w/a tomato sauce,I salted the sliced pieces of ep before,and let sit for awhile,b4 frying in a skillet. The problem was the skin on the edges was so tough,that it became uneatable,although the whole dish was great. Q.Why/how to make the outer skin more soft? Big hugs,and thank you.
I think some eggplants have much tougher skin than others. If you're using small thin eggplants they rarely need to be peeled. For larger ones, I would peel the skin if you don't like that texture. You can kind of tell by poking your fingernail through the skin when it's going to be tough, if that makes sense. I think for fried eggplant where it's cooked quickly at high heat, the skin will usually not soften much. Hope that helps!
