For years I made Slow Cooker Corned Beef for my slightly-Irish dad for St. Patrick’s day. Now I usually make Instant Pot Corned Beef, and I’m pretty sold on that method. And I love it with the Creamy Horseradish Sauce that’s included in the recipe!

How to Cook Corned Beef:
There are multiple methods for cooking corned beef but I recommend making Instant Pot Corned Beef with Creamy Horseradish Sauce. Everyone who likes the Instant Pot will love that method! And when I used to make this for my dad, we’d eat it with Brown Irish Soda Bread! That’s definitely not low-carb, but my dad wanted it every year!
If you don’t want to use the Instant Pot, you can’t go wrong with Slow Cooker Corned Beef. I also love this with that horseradish sauce! (Skip the carrots for lower carbs if you’re doing strict Keto.)
Recipes to use Leftover Corned Beef:
When I have corned beef in the fridge I always love to make this Low-Carb Reuben Bake. If you like Reuben Sandwiches, this has all those flavors!
