These Salads with Hearts of Palm are something I look forward to every year when warm weather arrives! For me the higher temperatures mean I’ll be eating lots of salads. And my fondness for salads is well-documented on the blog! And hearts of palm are are one of my favorite ingredients for for a salad that feels like a treat.

This is an ingredient I became infatuated with when Costco started carrying them in big jars. And I have LOVED hearts of palm for years and years now! (Sadly I haven’t been able to find those big jars at Costco for several years, sob!)

Hearts of palm are also a perfect low-carb food, and the taste is delightful. And in these salads I’m combining them with my other favorite summer ingredients for salads you’ll make over and over! If you haven’t used hearts of palm in a salad before, I hope you will try one right away!

What are Hearts of Palm?

Hearts of palm are a slightly-crunchy vegetable that’s harvested from the center of domesticated palm trees. Where can you buy Hearts of Palm?

Most grocery stores will sell Hearts of Palm near the olives and artichokes in cans and jars, although they are often somewhat pricey at some stores. You can buy hearts of Palm at Amazon.com (affiliate link) and occasionally you’ll find some there that are more inexpensive. (Amazon even carries those two packs of big jars like I loved at Costco, but they were definitely more of a bargain at Costco!)
