I first made this Mediterranean Salad with Hummus Dressing a few years ago on a Saturday when I hadn’t gone to the grocery store all week, and wanted to find something more interesting to eat than plain romaine lettuce salad. Luckily I found the a big tub of Hummus from Costco and remembered a recipe where hummus is blended with lemon juice and olive oil to make a unique dressing.  This recipe turned out to be a salad that tastes of everything that’s complex and interesting about Mediterranean flavors, and it’s been repeated many times since then.

The inspiration for the dressing of hummus, olive oil, and lemon juice came from a cookbook called Fiber Boost (affiliate link), given to me by the author, Amy Snider. There are all kinds of things you could add to this salad that I didn’t happen to have in the refrigerator, but even with the bare-bones Mediterranean ingredients I had on hand, this was delicious.

How to Make Mediterranean Salad with Hummus Dressing:

  1. I used the bowl attachment of my Immersion Blender (affiliate link) to combine the hummus, lemon juice, olive oil, salt, and pepper to make the flavorful dressing. (You could also do this in a food processor, blender, or even stir it together by hand.)
  2. I used three of my favorite ingredients for this salad: capers, Kalamata olives, and Feta cheese.
  3. I chopped the romaine lettuce and washed it with the salad spinner.
  4. Toss the lettuce with desired amount of the hummus dressing.
  5. Then add the capers, Kalamata olives, and crumbled Feta and toss again.
  6. Serve right away for a salad that’s really a wow!

Mediterranean Salad with Hummus Dressing also has olives, capers, and Feta cheese, and this is a great salad combo.


  • 1/3 cup prepared or homemade hummus
  • 2 1/2 T extra virgin olive oil
  • 1 1/2 T fresh squeezed lemon juice
  • salt, fresh ground black pepper to taste
  • 6 cups chopped and washed romaine lettuce
  • 4 oz. crumbled Feta cheese
  • 1/2 cup pitted kalamata olives
  • 1/4 cup capers


  1. Combine hummus, olive oil, lemon juice, salt, and pepper in food processor or the bowl of an Immersion Blender (affiliate link) and buzz a few times to mix well. (This could also be mixed by hand.)
  2. Chop romaine lettuce and wash in salad spinner and spin dry (or wash and dry with paper towels.)
  3. Crumble the Feta, cut olives in half, and measure out the capers.
  4. Put lettuce in a bowl, add about desired amount of dressing, and stir to coat lettuce with dressing.
  5. Add capers, Kalamata olives, and crumbled Feta and toss again.
  6. In the book, Amy’s salad had grape tomatoes and red onion rings.
  7. Other things you could add include diced cucumber, chopped red bell peppers, boiled eggs, shrimp, cooked asparagus, or canned tuna.
  8. The dressing keeps well in the refrigerator for more than a week.
