This post starts with an exciting announcement, although it’s definitely a nervous excitement. Twelve years ago I started blogging here on a low-tech blogging platform called Blogger, never imagining what the site would turn into. I was pretty low-tech myself, so the simplicity of it suited me well. Then a few years into what had turned into a blogging career I hired the fabulous Jennette, who managed to make my Blogger site pretty great within the limitations of that platform.

Through the years I watched my friends who were on Blogger move to WordPress, but by then my site had so many posts that I was scared to move. But it gave me courage when my friend Gina successfully moved to WordPress about a year ago, and I loved her new site. So I made a decision and in my Welcome 2017 post, I talked about wanting my site to work for all types of carb-conscious eating, and mentioned changes I was making. And then I waited a long time for the talented folks at Purr Design to get to me on the long list of bloggers wanting to work with them.

In the meantime, blogging and everything web-based kept getting much more complex. Google controls the web, and they now require special back-end recipe coding and a secure connection to send search engine traffic. I couldn’t do those things on the current site, so I really couldn’t wait any longer, even if I was nervous about it.

So today I’m sharing Low-Carb Twice-Baked Cauliflower, and then I won’t be posting for about a week while we move all the content here to the new WordPress site. The new site will be beautiful, and I hope long-time readers will take a look at the desktop version when it’s up, which is where the impressive new features will be most noticeable. But I know that after it’s moved there will be lots of editing to get things looking perfect again. I hope people will be patient as we iron out the kinks. How to Make Low-Carb Twice-Baked Cauliflower:

  1. Cut up the cauliflower and cook in boiling salted water until it’s barely soft, then drain well.
  2. Mash the cauliflower, leaving some chunks. (I mashed it a few times in the colander and then transferred to the pan I cooked it in and mashed a bit more.)
  3. Cook the bacon until it’s very crisp; then crumble bacon, slice green onions, cut cream cheese into cubes, measure sour cream, and measure Parmesan.
  4. Combine mashed cauliflower, cream cheese, sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon.
  5. Put the mixture into a glass casserole dish (with a lid) that you’ve sprayed with olive oil or non-stick spray, and top with sharp cheddar and the rest of the bacon.
  6. Bake with the lid on at 350F/180C until the mixture is bubbling and all the cheese has melted, about 30-35 minutes total. (I take the lid off for the last 10 minutes or so to brown the top a little.)
  7. Serve hot, and totally expect that even cauliflower-avoiders are going to go crazy over this.

Low-Carb Twice Baked Cauliflower

Low-Carb Twice Baked Cauliflower

Ingredients

  • 1 large head cauliflower
  • 4 oz. cream cheese, cut into cubes
  • 1/2 cup sour cream
  • 1/4 cup green onions, minced
  • 1/4 cup freshly grated Parmesan cheese (or more)
  • 6 slices bacon, cooked until very crisp, fat blotted with paper towel and then crumbled
  • 1 cup grated sharp cheddar cheese

Instructions

  1. Preheat oven to 350F/180C.
  2. Spray a glass casserole dish with olive oil or non-stick spray.
  3. Cut out stem and core from cauliflower, and cut into small pieces.
  4. Cook in large pot of boiling salted water until cauliflower is tender, but not overly soft.
  5. Drain well and mash with potato masher (affiliate link), leaving some chunks.
  6. While cauliflower is cooking, cook the bacon and crumble, slice green onions, cube the cream cheese, measure sour cream, and measure Parmesan.
  7. Mix cream cheese, sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon into the drained cauliflower.
  8. Spread evenly in a 1.5 Quart Glass Casserole Dish (affiliate link).
  9. Sprinkle with cheddar cheese and reserved bacon.
  10. Bake 20-25 minutes covered, or until hot and bubbly.
  11. Remove the lid and bake about 10 minutes more, or until the cheese is slightly browned. Serve hot.

Notes

This reheats very well and can be frozen and thawed in the fridge, then reheated.

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
Cauliflower is very low in carbs, and this should be a good dish for most any low-carb eating plans, including Keto. For the South Beach Diet it’s probably a once-in-a-while treat due to the amount of saturated fat, although you can make a more South Beach friendly version with light cream cheese, light sour cream, low-fat cheese, and even turkey bacon if you prefer, and it will still be delicious.

  10. How big is a serving size?

    • The recipe says 6-8 servings, so that’s up to you whether to eat 1/6 or 1/8 of the dish. If you’re calculating nutritional info just divide by 6 or 8 depending on how much you choose to eat. I can’t answer any more specifically than that.

  17. Would any of the times/proportions change if I used broccoli rather than cauliflower? It’s what I have on hand and this recipe sounds yummy enough to make for weeknight dinner this week.

    • I can’t really answer that since I haven’t ever considered making this with broccoli, but it might be interesting.
      I do think broccoli will cook much faster than cauliflower if you decide to try it.

I’m not able to provide nutritional information for the recipes for several reasons, including the additional time it takes, the difficulty in doing it accurately, and the sheer number of recipes on my site. If you look after the recipe itself, I give two links (where it says “Nutritional Information”) for suggestions of two ways to get that information. That’s all I can do at this time.

    However, I’ve been a carb-conscious eater for many years, so I am well aware of what foods are low in carbs. Just can’t edit over 2,000 recipes to add that info, and I know once I do it on one recipe people will expect to see it on every recipe

  20. Walmart & Publix stores in central Florida carry raw riced cauliflower in the produce department. One bag equals about 1/2 a medium head. Great time saver & less mess! Since I use a lot of riced cauliflower these days in various recipes, I find this product helps keep me on track when busy and/or tired. Can’t wait to try this recipe, looks scrumptious!
