I like any kind of breakfast with eggs, but in this post I’m giving a shout-out to Ten Favorite Low-Carb and Gluten-Free Eggs Recipes!
Each week when the weekend approaches I spotlight low-carb recipes you might want to try over the weekend. And since tomorrow is World Egg Day, this week I’m shining the spotlight on Ten Favorite Low-Carb and Gluten-Free Eggs Recipes! All of these are eggs recipes I would happily eat over and over and some are breakfast treats I’ve made for houseguests too.
And I do think eggs are an ingredient that lend themselves to unlimited variations in how you cook them and what other ingredients are included. Through the years I’ve had fun getting creative with them, and cooking some kind of egg casserole or other egg dish on the weekend to eat for breakfast during the week is one of my oldest healthy-eating habits.
It would be hard to think of an egg dish I didn’t like, but the Low-Carb and Gluten-Free Eggs Recipes featured here are some of the eggs recipes I’ve made over and over. Avocado Frittata with Cotija and Mozzarella Cheese is something I would love for breakfast any time I had avocados on hand! With some sour cream and salsa on mine, please.

Everyone who likes pizza for breakfast will love this Low-Carb Egg Crust Breakfast Pizza! This one has pepperoni and olives, but there’s a Low-Carb Egg Crust Vegetarian Breakfast Pizza too if you prefer that!
Sausage, Mushrooms, and Feta Baked with Eggs is another one of my egg bakes, with a lot of sausage, mushrooms, and Feta, and just a little egg keeping it together.
Baked Eggs Skillet with Avocado and Spicy Tomatoes has been popular, and this is just spicy enough to be interesting!
I’d even buy zucchini in the winter to make this Greek Frittata with Zucchini, Tomato, Feta, and Herbs.
When asparagus is in season, I think Baked Eggs and Asparagus with Parmesan is about as good as it gets for a fancy breakfast!
This Low-Carb Cheesy Crustless Quiche Lorraine is UH-MAY-ZING. There is bacon in this, so if you’re a bacon avoider, you have been warned!
Crustless Breakfast Tarts with Mushrooms and Goat Cheese are wonderful for a special breakfast. If you don’t have a fancy tart pan like mine, you can make these in large silicone baking cups.
And there’s nothing like a special omelet for breakfast, and this Sunday Morning Omelet with Mushrooms and Goat Cheese will always be a hit with guests who like those ingredients. This post has good photos of how to make an omelet as well if you’re not that experienced with it!
