I’ve been in such a frenzy of unpacking boxes around here that I can hardly believe Easter is in two more days!  I still have at least 30 more boxes to unpack, so there won’t be much Easter cooking going on at my house.  Instead I’ll be enjoying dinner at my sister Pam’s house, which is now only about five minutes away.  For those who are celebrating Easter, I’m guessing many people are cooking at least one of the traditional Easter foods like ham, asparagus, and boiled eggs, so here are ten fun ideas for using those leftovers from Easter, if you’re lucky enough to have any!

Probably my favorite idea for leftover boiled eggs is this Egg Salad in Pita with Green Olives, Green Onions, and Dijon.  It’s the green olives that make this just a little more fun than regular egg salad!


I love deviled eggs of any type, but my number one would have to be these spicy Sriracha Deviled Eggs.  That post also has ten more fun ideas for deviled eggs from Kalyn’s Kitchen and other blogs.

If you have some leftover ham, you might enjoy these Cottage Cheese and Egg Breakfast Muffins with Ham and Cheddar.  This type of breakfast muffin has a little ham and almond meal, for a kicked-up egg muffin with a little more texture.
Another traditional way to use leftover ham is in bean soup, and this White Bean Soup with Ham and Rosemary is loaded with flavor.
I know some of you are wondering at the idea of leftover asparagus, but if you’re lucky enough to have any I bet you’ll love this Salad with Asparagus, Cherry Tomatoes, Kalamata Olives, and Feta.
One of the most fun things I’ve made with leftover ham would have to be this Deviled Ham Spread for Stuffing Whole Wheat Pita or Celery.  You could use this on regular sandwich bread as well if you’re making lunches for school!
This Asparagus and Tomato Frittata with Havarti and Dill is another great way to use leftover asparagus.  If you don’t have Havarti, use any mild white cheese.
If I had leftover ham, I would probably make a trip to the market for cauliflower so I could make this Ham and Cauliflower Casserole Au Gratin (which is one of the few things I’ve already cooked in the new house!)
A reader sent me this recipe for Egg Salad and Cheese Quesadillas which will transform leftover hard-boiled eggs into something your family will gobble up!
And finally, I think this Asparagus and Fresh Mozzarella Frittata with Parmesan and Chives combines some of the best flavors of spring, and if you’re not lucky enough to have chives in the garden you can certainly use green onion.

Your muffins with ham would be a perfect treat for our big Sunday breakfasts, will try it!
