My name is Kalyn and I’m a butternut squash lover! I know it’s not a super-low-carb vegetable but for me it’s a treat I look forward to every fall. And I’ve got some tried-and-true recipes for cooking butternut squash, so today I’m sharing My Top Ten Butternut Squash Recipes.
I inherited the butternut squash appreciation gene from my Grandma Denny; Grandma would hack apart giant butternut squash from her garden, scrape out the seeds, and wrap pieces in foil and bake them in the oven. We’d eat the squash mashed up with lots of butter, salt, and pepper. Now I’m more likely to cut the squash in cubes and roast it with olive oil, but pretty much any way you cook it, I love the savory flavor of butternut squash.
And one thing I discovered when I was checking nutritional information for these recipes is that serving size makes a big difference for higher-carb veggies like this. But if Butternut Squash is too much of a carb splurge for you to want even a small serving, check out some of the low-carb side dishes on the blog!
Is Butternut Squash hard to cut up?
If you’re not that experienced at cooking Butternut Squash you might want to ready my post about How to Peel and Cut Up a Butternut Squash before you tackle one for the first time. Some stores sell squash cubes already prepped, but I think freshly cut squash has more flavor. You can definitely use the pre-cut ones if you prefer though, and they’re great for soup!

I love, love, love butternut squash. I was in the hospital for a few days recently and when I got home, all I wanted was butternut squash which ny husband picked up at Whole Foods…all cubed and seasoned…just popped it in the oven…I ate it for 3 days straight. Comfort food.

Terrah, would you believe I've never once cooked acorn squash? But I believe that any recipe that uses butternut could be made with acorn squash instead. Will check into doing a round-up for spaghetti squash, great idea!
Thank you for this round up. I was thinking of ways to substitute butternut squash for the ubiquitous pumpkin. Walmart sells bags of cut up squash for a reasonable price. Now, would you mind doing a round up/tutorial on spaghetti squash and possibly acorn squash? Thanks!

Katie, interesting idea. I never thought of roasting the seeds with the squash!
I have been cutting squash into wedges, skin and seeds intact, and roasting them with olive oil, salt, pepper and various spices. So much easier than skinning and cubing the squash and the seeds get crunchy and delicious! Full credit for that idea goes to Jules at her Stone Soup food blog – Google "stone soup miss en place" for the recipe. I'll be trying some of the flavor combinations you posted as soon as I get another squash on my hands – rosemary & balsamic sounds amazing.

Butternut squash is great in chili, too! I usually make a pretty standard turkey-based one, but I had leftover butternut squash cubes in the fridge, and thought, why not add these? Yum 🙂
I've also made a copycat of the dish Whole Foods occasionally has out on their hot bar, with the roasted squash, dried cranberries, red onion and rosemary.

'Tis the season, and I'm making something with butternut squash every few days. I confess I sometimes take a bit of help from the market when I know their pre-cut squash is freshly made, but once you get the hang of cutting the squash, the cooking is easy! Great collection of recipes, and I love the variety of spices.
