It’s been quite a month for cookies so far, and I don’t think I’ll manage to get any more cookie recipes tested before Christmas. But even though it’s not really a Christmas cookie, I want to share these updated Sugar-Free Flourless Cookies with Almond Flour and Flaxseed that Kara and I worked on to get a more flavorful sugar-free cookie. This one took us a few tries to get a version we really liked, and the final cookie reminded us a bit of Snickerdoodles, with slightly more complex flavors from the almond flour and the flaxseed meal.

If you’re suspicious about cookies with flaxseed meal, please don’t worry because the cookies only use a few tablespoons of it, plus flaxseed meal has a nutty flavor and flaxseeds are very nutritious! How to Make Sugar-Free Flourless Cookies with Almond Flour and Flaxseed:

  1. Preheat oven and line a large baking sheet with parchment paper.
  2. I used my KitchenAid Stand Mixer (affiliate link) and this dough is quite stiff so I’d definitely use a stand mixer if you have one.
  3. Mix together softened butter and Golden Monkfruit Sweetener (affiliate link).
  4. Add the salt and vanilla and mix a few seconds more.
  5. Then add the Flaxseed Meal (affiliate link) and Almond Flour (affiliate link) and beat until the mixture comes together.
  6. Then combine more Monkfruit sweetener with a bit of ground cinnamon. Pour that mixture out on a plate.
  7. Use a measuring spoon to scoop out dough, roll each one in the Monkfruit/Cinnamon mixture, and place the cookies in rows on the parchment paper. Use a fork to smash the cookies down.
  8. Bake about 30 minutes, or until cookies are barely starting to brown and feel barely firm.
  9. Let the cookies cool for about 20 minutes on the baking sheet; they will get more firm as they cool.
  10. These cookies freeze well; I’ve been grabbing one out of the freezer in the mornings to eat with my coffee!

Ingredients:

Cookie Ingredients:

  • 1/2 cup (one stick) softened butter
  • 10 T Golden Monkfruit Sweetener (or other sweetener of your choice)
  • 1/4 tsp. kosher salt
  • 1 tsp. vanilla
  • 3 T flaxseed meal
  • 2 1/2 cups almond flour

Cinnamon Topping Ingredients:

  • 3 T Golden Monkfruit Sweetener (or other sweetener of your choice)
  • 1 1/2 tsp. ground cinnamon

Directions:

  1. Preheat oven to 300F/150C and line a large baking sheet with parchment paper.
  2. Mix together the softened butter and Golden Monkfruit Sweetener (affiliate link). (I used my KitchenAid Stand Mixer (affiliate link) and this dough is quite stiff so I’d definitely use a stand mixer if you have one.)
  3. Add the salt and vanilla and mix a few seconds more.
  4. Then add the Flaxseed Meal (affiliate link) and Almond Flour (affiliate link) and beat until the mixture comes together. (It will be crumbly at first; continue mixing until it forms a stiff dough.)
  5. Then mix the 3 T Monkfruit sweetener with the ground cinnamon and pour that mixture out on a plate.
  6. Use a measuring spoon to scoop out slightly heaping tablespoons of dough, roll each one in the Monkfruit/Cinnamon mixture, and place in rows on the parchment paper. Use a fork to smash the cookies down about 1/2 inch thick.
  7. Bake about 30 minutes, or until cookies are barely starting to brown and feel barely firm.
  8. Let the cookies cool for about 20 minutes on the baking sheet; they will get more firm as they cool.
  9. These cookies freeze well; I’ve been grabbing one out of the freezer in the mornings to eat with my coffee!

Notes:

This recipe originally adapted from a cookie recipe found online on a site that no longer exists; this version was adapted by Kalyn and Kara for a sugar-free cookie with better flavor. I originally made this with a blend of Granulated Stevia Sweetener and Golden Monkfruit Sweetener (affiliate link), but now I would prefer to use only Monkfruit Sweetener.

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
This recipe should work for low-carb and Keto diets, and some low-glycemic diet plans. The South Beach Diet doesn’t recommend butter, and if you made this with an approved margarine the cookies would still be phase 2 or 3 for South Beach due to the almond flour.

  3. I made these last night and I absolutely loved them…what a treat. I couldn’t find almond meal anywhere, so I took raw almonds and blended them into meal myself, then added the flax and the rest of the ingredients as the recipe says. My boyfriend and cousin (who are not dieters by any means) loved them too…they were a hit in my house!

  4. Rebekah, sorry but I truly have no idea what the carb count is. The brand lf almond meal I have is 6 carbs per 1/4 cup but 3 carbs of that is fiber. My Flax Seed Meal is not in the original bottle, so I don’t know the carb count for that. I would suggest you look on the containers you use and add it up, then divide by how many cookies you made.

    Yes, for baking Splenda or Granulated Stevia is substituted cup for cup for sugar, and I haven’t tried it but I’m pretty sure you could make these with sugar for someone who’s needing gluten-free but can eat the sugar.

  7. So it’s actually possible to substitute Splenda for sugar, cup for cup? I like using sugar as sugar, and have never tried converting a Splenda recipe before. Wish I’d seen your post earlier as I only found out pretty late in the day yesterday that someone who was coming over to our place was a coeliac!

  9. I made these this weekend. I used a stick of butter instead of the healthy stuff. The only problem I had was that I COULD NOT STOP EATING THESE! So, yes they will be a once in awhile dessert since I apparently have no self control. Thanks for the recipe.
