South Beach Recipes of the Week #12:
Zucchini and Eggplant

Once a week I like to spotlight some low glycemic index recipes I find on other food blogs. If you don’t know about the glycemic index, it’s what the South Beach Diet is based on. It’s been fun to spotlight recipes from other blogs to show how easy it is to find or adapt recipes that are South Beach Diet friendly.

I’ve been posting these *South Beach Recipes of the Week* on Saturday, but now I’ve decided to start taking Saturday off from posting to the blog. Hereafter Saturday shall be declared *blog maintenance day*. Of course, there are still plenty of great South Beach Diet friendly recipes in Kalyns Kitchen Recipe Archives for you to play around with on Saturdays. I’ll be posting South Beach Recipes of the Week on Sundays from now on.

This week there are so many great recipes featuring squash or eggplant that I couldn’t narrow it down to just four, so there’s a bonus recipe. Whether or not you’re a South Beach Dieter, I bet you’ll see something here that looks good!

At Simply Recipes, where I always see great looking food, I spotted this simple, but yummy-looking way to cook zucchini. Elise’s recipe for Zucchini with Thyme does have butter, which is not SBD approved, but you could use all olive oil if you wanted. I’d probably use the butter for extra flavor and not worry too much, since it’s only about a teaspoon of butter per serving.

I also loved the look of this simple preparation of Baby Pattypan Squash with Squash Blossoms that I found at A Veggie Venture. I would use the optional thyme that Alanna mentions in her recipe, and again, I’d use butter and not worry about it, but you could substitute olive oil if you wanted.

Another zucchini recipe that really caught my eye was this one from the great German blog Kuchenlatein, featuring skewers of Grilled Zucchini and Red Onion with Halloumi, Lemon and Rosemary. I thought the Halloumi cheese used here was fairly high in fat, but Ulrike tells me it’s comparable to mozarella, and everything else here is perfect for South Beach Dieters. If you can’t find Halloumi, or don’t want to use it, this would still be a great way to cook zucchini.

From Helen of Beyond Salmon I spotted a recipe that I’ve already saved to my del.icio.us cookbook to remind me to be sure to plant eggplant next summer. South Beach Dieters could replace the honey with Splenda if you wanted, but Honey Garlic Grilled Eggplant has just a tiny bit of honey, and I wouldn’t hesitate to make this recipe as written.

Now the bonus recipe I promised; I just couldn’t resist this amazing looking Tunisian Eggplant Salad I saw at Cook (almost) Anything At Least Once. With eggplant, tomatoes, onions, and spices, everything about this recipe sounds perfectly South Beach friendly, and it looks like it would taste magnificent.

    The fat content of halloumiis not as high as you may think: 43 % dry weight is “only” 25 % wet weight, nearly like mozarella.

  5. hey Kalyn, i’m a first timer here…and wow!!what a great site!!
    I have a question…in your marinara recipe, is it ok to skip the sausage and use normal browned ground beef? Have you ever tried it that way…or do you think it’ll change the flavor too much? I’m planning to make some of your marinara sauce this week…it looks delicious!

    Nabeela, thanks for visiting! there’s no reason you couldn’t use ground beef if you prefer. I might bump up the fennel a little because the Italian sausage has fennel in it. If it’s a pork thing, did you notice that I use the turkey Italian sausage which I think is great in this.

  8. I don’t follow the SBD, but I do pay attention to the glycemic index and I appreciate all the tips and information here, especially when it comes to eggplant. I guess you could say my approach is half low-glycemic, half Mediterranean.

  11. There are some great recipes here, but may be you should try eggplant with honey. Just slice up the eggplant, pour over some honey and bake for about 20 minutes.
