South Beach Diet Phase One Recipes Round-Up for April 2013 (Low-Glycemic Recipes)

South Beach Diet Recipes
My favorite Phase One Recipes from April 2013 were Lentil Taco Salad, Roasted Asparagus with Gremolata, Roasted Garbanzo and Vegetable Salad, and Spicy Broccoli Jicama Salad.

 

It’s May 1, and the gardener inside me is fighting to get out.  Unfortunately my new house has serious gardening challenges (like higher elevation and critters) that will take me at least a year to work out before I’ll have a garden that’s even close to the garden I’m used to.   I will plant a few things in the small chicken-wire enclosed garden space the previous owners had, and I do have a few herbs growing in my window, but I may have to make more trips to the farmer’s market, or even share a CSA share with someone to get my veggie fix this summer.

And summer is definitely coming!  One way I can tell is the abundance of salads and other vegetable dishes in this months South Beach Diet Phase One Recipes Round-Up.  And even though there have been a few cold days in April, I only found one Phase One Soup.  I hope you will enjoy trying the delicious offerings I discovered in April!  Of course, every month I find things that could easily be Phase One with small changes, so those things are noted after the recipe links.  And if you’re a food blogger who’s posted something that might be a new idea for Phase One, see after the recipe links for how to submit it.

Did I Miss Your Phase One Recipe?

Phase one menus for the South Beach Diet focus on lean meats, seafood, eggs, dried beans, soy products, low-fat dairy products, nuts and seeds, and most vegetables. Phase one doesn’t permit fruit, alcohol, bread, rice, pasta, potatoes, sugar, or any foods high in saturated fat. Obviously I miss lots of phase one recipes, so if you’re a food blogger who posted a recipe this month that you think would be approved for phase one, please feel free to e-mail me the link at kalynskitchen (at) comcast (dot) net.
