South Beach Diet Phase One Recipes Round-Up from December 2008 (Low-Glycemic Recipes)

In March of 2008 I started doing Low-Glycemic Recipe Round-Ups, including phase one recipes from Kalyn’s Kitchen posted during that month. It’s been fun seeing how many tasty phase one options I find, even in months like December when I wasn’t that vigilant about looking for them. Tomorrow starts the biggest dieting month of the year, and I know phase one is challenging for many people who’re starting the low-glycemic way of eating that’s the foundation of the South Beach diet. In January I’m always doing a little diet tune-up myself, and this will be the third year in a row I’ll be posting all phase one recipes during the month of January. This year I’ll be sharing some of my favorite phase one dishes from the past, as well as new phase one recipes I’ve been working on.

Did I Miss Your Phase One Recipe?

Phase one menus for the South Beach Diet focus on lean meats, seafood, eggs, dried beans, soy products, low-fat dairy products, nuts and seeds, and most vegetables. Phase one doesn’t permit fruit, alcohol, bread, rice, pasta, potatoes, sugar, or any foods high in saturated fat. Obviously I can’t find every phase one recipe, so if you’re a food blogger who posted a recipe you think would be approved for phase one and I missed it, please feel free to e-mail me the link at kalynskitchen (at) comcast (dot) net.     Elizabeth, you’re right that you wouldn’t eat potatoes or noodles with this if you’re a South Beach dieter. I’d serve it with something like roasted vegetables and a salad for phase one, or with brown rice, Uncle Ben’s rice, or butternut squash and a vegetable for phase two or three.

  10. That looks delicious! My first thought was that it looks too good to be “diet food”. But of course, that’s ridiculous. I guess it just proves that you don’t have to eat things that taste dull as dish water when on a weight loss diet.

    My impulse would be to serve this with noodles or mashed potatoes. But I gather that on phase one of the diet, you cannot have much starch (if any??). What would you serve this wonderful pot roast with?

  12. i don’t want to get serious. i want to learn how to eat properly. i have cancer and nobody told me i was going to gain weight! now it’s time to learn to to eat less cheese and more legumes. so far so good – but i am looking forward to working with you. happy 2009! ellie
