This amazing Vegan Heart of Palm and Avocado Salad with Lime, Green Onion, and Cilantro is what I’m recommending all of you should make for a Meatless Monday lunch tomorrow, and it’s also a perfect choice for our anyone who’s watching carbs this  month. Every now and then you come across a recipe that just knocks your socks off, and my nephew Jake and I went crazy over this simple salad with hearts of palm, avocado, lime, green onions, and cilantro.In fact the recipe makes 4 side dish servings, but we finished all but a few spoonfuls of it right after we made it. The recipe came from my friend Suebob, who messaged it to me on Facebook along with a note saying she got it from a friend at Weight Watchers.  Thanks Suebob; this is definitely something I’m going to be making over and over!

If you’re not familiar with hearts of palm, they come in cans and jars and are usually sold near the olives. I buy them in large jars at Costco, and they are admittedly pricey in the regular grocery store.  Let the hearts of palm drain while you cut up the avocado.Cut the avocado into small pieces and toss with 2 T of lime juice.  (If I had been smarter I would have done that in the bowl where I was making the salad and saved dirtying another dish!)

When the hearts of palm are well-drained, slice them into pieces about 1/2 inch thick. If they break apart, break into rings.  I also cut a few of the larger pieces in half.I used 1/2 cup finely chopped cilantro and 1/4 cup thinly sliced green onion.  (You can substitute red onion for the green onion if you’d like.)

Mix together the diced avocado with the lime juice, sliced hearts of palm, chopped cilantro, and sliced green onion. Then stir in 1 more tablespoon of lime juice and season generously with salt. Enjoy!!

Vegan Heart of Palm and Avocado Salad with Lime, Green Onion, and Cilantro

Vegan Heart of Palm and Avocado Salad with Lime, Green Onion, and Cilantro is mind-blowingly good!

Ingredients:

  • 2 (14 oz) cans or 1 large jar (26 oz.) hearts of palm
  • 2 avocados
  • 2 T + 1 T fresh-squeezed lime juice (or more)
  • 1/2 cup finely chopped fresh cilantro
  • 1/4 cup thinly sliced green onion (or chopped red onion)
  • sea salt to taste for seasoning finished salad

Directions:

  1. Drain the hearts of palm into a colander placed in the sink, and let them drain well while you cut the avocado.
  2. Dice avocado and toss with the 2 tablespoons of lime juice.  (Just use the bowl you’re making the salad in.)
  3. Cut the hearts of palm into slices about 1/2 inch thick, breaking it apart into rings or cutting the larger slices in half if they don’t break apart.
  4. Chop cilantro and thinly slice green onion.
  5. Add the sliced hearts of palm, chopped cilantro, and sliced green onion to the avocado and stir gently to combine.
  6. Add the final tablespoon of lime juice (or a bit more if desired) and season the salad well with sea salt.
  7. Serve immediately.

Notes:

This would probably keep in the fridge for at least one day, but you probably won’t have any left!
