My sister Val’s Sweet Cabbage Slaw with Green Onion and Parsley was a hit at our family party, and I love the parsley in this interesting slaw recipe.

Several weeks ago I had a family party for Father’s Day, and my sister Valerie brought Val’s Cabbage Slaw with Green Onion and Parsley. Everyone loved this cabbage slaw with a sweet-and-sour dressing, green onion, and parsley! I’m a big fan of parsley, but I don’t think I’ve ever seen it used in a sweet coleslaw recipe like this and it turned out to be a great combination with the crunch of the cabbage, the sweet dressing, and the savory flavor of the green onion all getting along very well with the parsley.

The dressing on the salad Val made had quite a bit of sugar so I wasn’t sure how this would work with sweetener, but when I tried it I loved the low-carb version of the salad just as much as the original. And this recipe is ALL about the parsley, so if you’re a parsley fan go ahead and use more parsley if you’d like!

How to Make Val’s Sweet Cabbage Slaw with Green Onion and Parsley:

  1. Thinly slice the cabbage, then coarsely chop.
  2. Then coarsely chop parsley to make about 3/4 cup chopped parsley (or more!)
  3. Thinly slice the same amount of green onions.
  4. Val used regular white vinegar in this salad, but I made it with white wine vinegar (which has zero carbs, yaay!)
  5. Stir together the oil, white wine vinegar, Monkfruit Sweetener (affiliate link) or sweetener of your choice, salt, and pepper to make the dressing.
  6. Then toss together the chopped cabbage, chopped parsley and sliced green onion.
  7. Add just enough dressing to moisten the salad and toss again. Simple and delicious!

Val’s Sweet Cabbage Slaw with Green Onion and Parsley is a great side dish with plenty of flavor!

Ingredients

  • 6 cups coarsely chopped green cabbage
  • 3/4 cup chopped parsley (see notes)
  • 3/4 cup thinly sliced green onion (or more)
  • 1/4 cup canola oil
  • 1/4 cup white wine vinegar or white vinegar
  • 1/2 cup granulated Monkfruit Sweetener (see notes)
  • 3/4 tsp. sea salt (or to taste)
  • freshly ground black pepper to taste

Instructions

  1. Cut out core from cabbage, then thinly slice and coarsely chop slices until you have about 6 cups chopped cabbage.
  2. Wash and coarsely chop parsley.
  3. Thinly slice green onions.
  4. In small bowl or glass measuring cup, stir together the canola oil, white balsamic vinegar or white vinegar, sweetener, salt, and pepper.
  5. Put chopped cabbage, chopped parsley, and sliced green onions into salad bowl and toss to combine.
  6. Add just enough dressing to moisten salad, and toss again. (You may not need all the dressing.)
  7. Taste to see if you want more salt or pepper, then serve.
  8. This will keep for a day or so in the fridge, although I think it’s better freshly made when the cabbage has more crunch.

Notes

You can use flat or curly parsley, whichever you prefer, and feel free to use more parsley if you're a fan. I love Monkfruit Sweetener (affiliate link) and that's what I'd use for this recipe, but use your favorite no-carb sweetener.
