When it’s zucchini season, most people love easy recipes that use zucchini, right? This year I planted just one zucchini plant and one yellow summer squash plant in my little fenced garden space, and already I’m starting to get zucchini at a rate that’s making me think about how to use it. So there might be an abundance of zucchini recipes coming up for the next little while!

This Grilled Sausage and Summer Squash with Lemon and Herbs is a recipe I first made about ten years ago, inspired by one that I spotted in Fine Cooking Magazine. This is a perfect way to use overly-abundant squash from the vegetable garden, but even if you (gasp) have to buy zucchini, this is quick and easy for a summer dinner! Through the years I’ve stopped adding Kalamata Olives and started using a few more chopped fresh herbs in this dish, and I love the way the flavor of the herbs, capers, and lemon juice brightens up the grilled squash and sausage.

I used mint and parsley for fresh herbs, but you could use any combination that appeals to you. You could certainly add other veggies like red onion, mushrooms, or red bell pepper if you happen to have some. And I think this would be great with any kind of sausage you like to cook on the grill. But please don’t skimp on the lemon, olive oil, and herb sauce that gets mixed in with the cooked squash and sausage; that’s what makes this easy grilled zucchini and sausage so mind-blowingly good! And we forgot to show it when we took these new photos, but we loved this with fresh lemon pieces to squeeze on at the table.

How to Make Grilled Sausage and Summer Squash with Lemon and Herbs:

  1. Preheat grill to medium-high heat. 
  2. For grilling I love Johnsonville Italian Sausage; either sweet or hot sausage will work for this. If you prefer a low-fat sausage, put it in a bowl and brush with olive oil. (Choose gluten-free sausage if you need this to be gluten-free.)
  3. Cut up 2 medium zucchini and 2 medium yellow squash into same-size pieces. 
  4. Toss squash with olive oil, salt, and pepper while you preheat grill basket. If you don’t have a grilling basket (affiliate link) like this, check recipe below for another option.
  5. Put sausage on the grill and then add vegetables to the grill basket. 
  6. Grill sausage and squash about 18 minutes, turning several times with tongs and a large turner.
  7. It is done when sausage feels firm and is lightly browned and squash is tender and starting to brown. 
  8. While sausage and squash cooks, finely chop the mint and parsley (or herbs of your choice) and measure out the capers. 
  9. Mix herbs and capers with lemon juice, olive oil, and some Spike Seasoning (affiliate link) or other all-purpose seasoning.
  10. When sausage is cooked through, remove from grill and slice into 1 inch slices.
  11. Toss grilled sausage and squash with the lemon and herb mixture.
  12. Season with salt and fresh ground black pepper and serve hot, with extra lemon to squeeze on at the table if desired.
  13. The extra squeeze of lemon is HIGHLY RECOMMENDED if you’re a lemon-lover like me!

Grilled Sausage and Summer Squash with Lemon and Herbs is such an easy and delicious idea for a summer dinner.

Ingredients

  • 2 medium zucchini (see notes)
  • 2 medium yellow summer squash (see notes)
  • 2 T + 2 T olive oil
  • salt and fresh ground black pepper to taste
  • 5 links (19 oz.) Italian sausage (see notes)
  • 1/4 cup chopped fresh mint (see notes)
  • 1/4 cup chopped fresh parsley (see notes)
  • 2 T capers
  • 3 T fresh lemon juice
  • 1 tsp. Spike seasoning

Instructions

  1. Preheat grill to medium-high heat. Spray a grilling basket (affiliate link) with non-stick spray. (If you don't have a grilling basket, cut each squash into six pieces lengthwise and grill the strips, then cut into smaller pieces.)
  2. I'm a fan of turkey Italian sausage, but for grilling I love Johnsonville Italian Sausage; either sweet or hot sausage will work for this. If you prefer a low-fat sausage, put it in a bowl and brush with olive oil so it doesn't stick on the grill. (Be sure to choose gluten-free sausage if you need this to be gluten-free.)
  3. Cut up 2 medium zucchini and 2 medium yellow squash into same-size pieces. I sliced the squash lengthwise and then into slices, and cut some of the bigger pieces in half again.
  4. Toss squash with 2 tablespoons of the olive oil, salt, and pepper while you preheat grill basket.
  5. Put sausage on the grill and then add vegetables to the grill basket.
  6. Grill sausage and squash about 18 minutes, turning several times with tongs for the sausage and a large turner for the squash.
  7. It is done when sausage feels firm and is lightly browned and squash is tender and starting to brown. (Precooked sausage will need less time.)
  8. While sausage and squash cooks, finely chop the mint and parsley (or herbs of your choice) and measure out the capers.
  9. Mix herbs and capers with lemon juice, other 2 tablespoons of olive oil, and some Spike Seasoning (affiliate link) or other all-purpose seasoning.
  10. When sausage is cooked through, remove from grill and slice into 1 inch slices.

  12. Season with salt and fresh ground black pepper and serve hot, with extra lemon to squeeze on at the table if desired.

Notes

I used about 2 1/2 lbs. squash; you can use all one color of squash if that's what you have. I used Johnsonville Pork Italian Sausage, but you can use turkey Italian Sausage if you prefer. Sweet or hot sausage are both good in this recipe. Use any combination of fresh herbs that appeals to you.

  6. We made this tonight- it turned out great! We used cilantro and basil. Didn't weigh the squash and zucchini, just used what we had, which was one big zucchini and an average sized squash. It could've used more vegetables, I think- will add more next time. And there will be a next time! Quick and easy.

  16. Serendipity! I found a few links of hot Italian turkey sausage in my freezer last week, and with squash from the farm stand, I'll be all set to try this dish. There are so many wonderful types of chicken sausage in the market that would work, too (sun-dried tomato is the variety that comes to mind).
