Anyone who shops at Costco and likes salad has probably purchased Spring Mix Greens, a heaping tub of baby greens. I confess there was a time when this used to go to waste in my fridge, but then I discovered my friend Mary’s Perfect Easy Dressing for Spring Mix Salad Greens.

This simple method of dressing the salad from my friend Mary (who’s someone I’ve been friends with since high school!) and what’s essential is the way Mary combines a generous squeeze of lime with just the barest hint of red wine vinegar and absolutely top quality olive oil. This is something I never get tired of eating.

I absolutely love Mary’s Easy Salad Dressing for Spring Mix Greens just as the recipe is written when I need a simple side dish that only takes a couple of minutes to prepare. Of course, you can add all kinds of things to kick it up a notch such as crumbled Gorgonzola, feta, shaved Parmesan, olives, red peppers, artichoke hearts, toasted pine nuts or almonds. Add one of of those things to make it a bit fancier, and you could even serve this salad at a dinner party!

Mary's Easy Salad Dressing for Spring Mix Greens

I think Mary’s Easy Salad Dressing for Spring Mix Greens is the perfect dressing for those big tubs of greens you get at Costco!

Ingredients:

  • Best quality olive oil, enough to cover greens (I’d say about 1 T. for a large serving of salad. Be sure the olive oil says *Extra Virgin* and *First Cold Pressed* on the label if you want the best flavor.)
  • Juice of 1/2 lime (you can use lemon, but the lime is really great)
  • About 4 drops of red wine vinegar
  • salt and fresh-ground black pepper to taste

Directions:

  1. Toss greens with enough olive oil to barely coat lettuce.
  2. Squeeze lime juice over salad.
  3. Sprinkle on red wine vinegar and toss again.
  4. Season with salt and fresh-ground pepper, then serve.

Notes:

This perfect dressing for Spring Mix Greens was something I tasted at the house of my lovely friend Mary.
