Of course you can make your giant zucchini into flourless zucchini muffins or flourless savory zucchini muffins, but there are also plenty of good main dishes to make with monster zucchini!
I’ve definitely had my share of zucchini that have hung out in the garden too long, and these Recipes for Extra Large Zucchini are some good ideas for using them that I’ve developed over many years of being a passionate gardener. And I still have fun using a giant zucchini now whenever I get one!

I came up with the idea for these Grilled Zucchini Pizza Slices when I had giant zucchini that were so big that one slice could look like a small piece of pizza!
Cheesy Zucchini and Basil Strata is another recipe that uses the trick of scraping out the big seeds from an overlarge zucchini, and this is great for breakfast or as a side dish.
These Flourless Savory Zucchini Muffins with Feta are a tasty breakfast or dinner muffin that’s great to make on the weekend!
When the weather cools down enough that you’re ready to make soup you can use those giant zucchini or yellow squash in this Zucchini and Yellow Squash Soup!
Monster zucchini that’s had the seeds scraped out and then gets diced into small pieces is perfect in an egg dish like this Greek Frittata.
Giant zucchini are perfect to cut into thick lengthwise slices, grill the zucchini at very high heat (to remove some of the water) and then use the zucchini slices as the lasagna noodles in this Grilled Zucchini Lasagna.

These recipes look great. I grow zucchini, but this year I didn’t get any…sometimes it’s feast other times famine. Luckily I had a lot of zucchini in the garden last year and canned 44 jars of salsa. Salsa is a great way to use large zucchinis as well. Enjoy!

I was just given a zucchini that is 16″ long and 4″ wide and had no idea what to do with it! You have some great recipes that I will be trying out. We’re fortunate that “low-carb”, “lactose-free” and “gluten free” are of no concern or worry. It’s awesome that you took the time and effort to do this for those that are on low-carb diets. But this year I have 2 monsters that simply got away from me and I didn’t know what I was going to do with them. Your ideas look wonderful and innovative and I can’t wait to try them. Oh, this Popeye eggs seem to be the right thing for me and my son. Since he ate his first vegetables, he loved Zucchini – now seven years later, they’re still one of his favorites. We use to make big batches of oven grilled long slices, so we can wrap pieces of feta in it or serve it with crispy baked potatoes, give them on a rocket salad or snack them pure.
