I have absolutely no idea how we’re suddenly in the month of September, but there’s the calendar staring me in the face so I can’t deny that summer is winding down. But there are still several weeks of summer left, so this week’s Low-Carb Recipe Love is going to be all about the Summer Tomatoes that are so perfect and amazing right now!
Last week I talked about how I love tomatoes and all the other summer garden foods like zucchini, cucumbers, and green beans, and every year I want to keep making my favorite summer foods as long as I possibly can. And of course this weekend is Labor Day, a time when people are enjoying the last days of warm weather and those flavors of summer that taste so good when you’re eating outside, so summer foods are still perfect for this time of year. Right?
Now, here are the summer tomato salads I swooned over this week, and I hope you have some wonderful garden tomatoes you can use to try a few of them! And Happy Labor Day Weekend if you’re in the U.S.!

Another recipe I think looks like it would be a huge hit at a Labor Day Party is these Grilled Caprese-Style Portobellos
from Sugar-Free Mom. Pretty much any salad with the word “Caprese” in the title is going to get my attention, and add grilled portobello mushrooms and it sounds like a wow!
