Happy Friday everyone, and here’s another fun collection of tasty-looking low-carb recipes to inspire your cooking over the weekend or in the coming week. I’m guessing some of you in the U.S. were doing a bit of extended celebrating after the holiday and are ready to get back to lower-carb meals, and I hope some of these tasty ideas can help. At my house we had guests staying for a few nights, including some my nephew and his family of five cute kids who stayed at my house for the first time. I definitely tend to indulge a bit more on weekends when I have people staying with me, and when a new week starts I’m always happy to get back on track.
This week’s low-carb recipe suggestions include a couple of ideas that I think sound really fun, and there’s something for everyone in this collection! I do wonder each week if people are trying some of the recipes, so if you do try one I’d love to hear in a comment about how it worked for you!

from South Your Mouth. From the comments on the post, it seems that this has 6 carbs per serving even with the carrots, but use less carrots or omit if you prefer.
Roasted Eggplant Caprese Salad
