And just like that it’s already Friday! I honestly don’t know how the weeks go screaming by so quickly, even though I feel like I am trying to make the most of them. I don’t know about other parts of the country, but zucchini season is in full swing in Utah (and it’s almost time to start leaving zucchini on your neighbor’s porch
), so there are a couple of zucchini recipes in the things that caught my eye this week.
There are also a couple of amazing-sounding recipe here that I wish I’d thought of myself, and one of the most frustrating things about being a food blogger is that you rarely have time to try other people’s recipes because you’re always busy testing out your own. Justine from Slice of Kitchen Life says these Creamy Spinach Stuffed Mushrooms
are a perfect summer lunch or light dinner, and I’d have to agree that they sound amazing. Justined used baby portobello mushrooms for this but she says larger-sized mushrooms would also work well.

from All Day I Dream About Food. Carolyn adapted this from a recipe her husband used to make with wheat flour, replacing it with coconut flour for this low-carb and gluten-free version, but she did double the amount of Feta, which sounds perfect to me!
Quick stovetop recipes with chicken breasts are perfect for any time of year, but if you have jalapenos in your vegetable garden, you’ll want to hurry and make these Chicken Breasts with Jalapeno Cream Sauce
from Family Food on the Table. I’m a sucker for chicken with a creamy sauce, and I think this looks fabulous.
And from Kalyn’s Kitchen this week, this Roasted Balsamic Zucchini and Mushrooms with Feta and Thyme
is a dish that made history when my brother in law asked for a second helping of vegetables! Kelly is widely known as a veggie avoider, so you can tell this roasted zucchini is really good. And if you happen to have some of those zucchini that got a little large, they work perfectly for this one!
