Leftover Tofu, Halloumi, and Tomato Salad

Recently I found myself with some leftover Baked Tofu, and this Leftover Tofu, Halloumi, and Tomato Salad was such a satisfying way to use leftover tofu that I thought it might be worth posting. Baking gives tofu a slightly chewy texture, making it perfect to use as a salad topper like this. I thought this was a quick and tasty salad for a summer lunch.

I couldn’t resist grilling a slice of Halloumi Cheese at the same time I browned the tofu and it made a nice flavor contrast with the tofu, but you could certainly use any kind of cheese here, or just make a salad with tomatoes and tofu if you’d rather skip the cheese. This salad used purchased tomatoes-on-the-vine from Costco, but later this summer when tomatoes are fresh from the garden, the salad would be even better.

Leftover Tofu, Halloumi, and Tomato Salad

Leftover tofu isn’t something I have that often, but when I had some recently I made this delicious Leftover Tofu, Halloumi, and Tomato Salad!


  • 2-3 cups salad greens (I used Romaine lettuce)
  • 1 tsp. olive oil, for browning tofu
  • about 3 oz. slice of leftover Baked Tofu, browned and cut into cubes
  • 1 oz. slice Halloumi cheese, browned and cut into cubes
  • 4 small tomatoes, cut into pieces
  • 1-2 T salad dressing of your choice (I used purchased blue cheese dressing)
  • Fresh ground black pepper to taste


  1. Heat olive oil in small non-stick frying pan.
  2. Add Baked Tofu, slice (and Halloumi if using) and cook until well-browned on both sides.
  3. Remove to cutting board and cut into cubes about 1 inch square.
  4. Cut tomatoes into bite-sized pieces.
  5. Wash salad greens and spin dry, or dry with paper towels.
  6. Toss salad with dressing and arrange in salad bowl.
  7. Sprinkle tofu cubes, cheese cubes, and tomato pieces over dressing.
  8. Season with fresh ground black pepper, and serve.

  1. Tofu and cheese in the same salad sounds interesting. I’ve never heard of halloumi but I’ll have to try it.

  5. CC, me too, I don’t know why I didn’t cook tofu years ago. Oh well, I’m planning to make up for lost time. I first had grilled octopus last year in SF and fell in love with it!

    Tanna, you are always so sweet. I’m not sure this classified as a “recipe” but the combo of tofu and Halloumi with tomatoes was great on the salad. Basil is just starting to thrive here, but I do need to pick some.

  9. I have a grill pan now so I’ve been eager to grill some halloumi. I bet octopus or calamari would be terrific in this salad as well!
