When it’s summer, grilled chicken breasts are always on the menu at my house, and if I’m going to take the time to prep the chicken, marinate it, and then grill it, I’m going to make extra grilled chicken for leftovers. And I have a whole collection of Low-Carb and Keto Chicken Salads on the blog, but that doesn’t stop my brain from coming up with more ideas.

Not long ago I made Rosemary Mustard Grilled Chicken for a big family party, and with some of the leftover chicken I made this Chicken and Hearts of Palm Salad. Not only was this delicious salad extra low in carbs, but it’s gluten-free and dairy-free too. If grilled chicken isn’t on the menu at your house, this would also be delicious with leftover rotisserie chicken, the ones that jump into your basket when you’re at Costco. Enjoy!

What are Hearts of Palm?

Hearts of Palm (affiliate link) are a slightly-crunchy vegetable that’s harvested from the center of domesticated palm trees. They used to be somewhat controversial, but newer harvesting methods don’t damage the trees and wild palms are protected in many places. And Hearts of Palm are so delicious! Where can you buy Hearts of Palm?

Most grocery stores will sell Hearts of Palm, sold near the olives and artichokes in cans and jars, but they are often pricey at a regular grocery store. You can buy hearts of Palm at Amazon.com (affiliate link) and occasionally you’ll find some there that are more inexpensive. (Amazon even carries those two packs of big jars like I loved so much at Costco, but they were definitely more of a bargain at Costco, or course!)

How to make Chicken and Hearts of Palm Salad :

  1. Hearts of Palm (affiliate link) are one of my favorite summer ingredients.
  2. Drain the hearts of palm well, and then pat dry with paper towels.
  3. Cut hearts of palm into thick slices.  (Don’t worry if some break apart into rings.)
  4. Drain one can of extra large black olives and slice up enough green onion to make 1/2 cup sliced green onion. (You can cut the olives in half if you prefer, but I liked the whole olives in this salad.)
  5. The mustard-lemon vinaigrette is one thing that makes this salad so good. Start by zesting the peel from a lemon and squeezing the juice.
  6. Whisk together the lemon zest, lemon juice, spicy brown mustard (or any sugar-free mustard), olive oil, and plenty of black pepper to make the dressing.
  7. You’ll need about 4 cups of diced, cooked chicken which was 4 small grilled chicken breasts, or about a pound of leftover chicken.
  8. Toss the diced chicken with 1/2 cup of the dressing. If you have time to let it marinate in the dressing for a few minutes, that’s always good.
  9. Toss the the hearts of palm, olives, and sliced green onion with the marinating chicken, adding more dressing until the salad is as moist as you prefer. 
  10. Season to taste with salt and fresh ground black pepper.
  11. This can be chilled for a few hours or served right away; enjoy!

Use leftover grilled or rotisserie chicken to make this tasty Chicken and Hearts of Palm Salad that also has olives and a mustardy dressing!

Ingredients

Dressing Ingredients:

  • 1 T lemon zest
  • 1/4 cup fresh-squeezed lemon juice (see notes)
  • 2 T spicy brown mustard (see notes)
  • 1/2 cup extra-virgin olive oil
  • fresh-ground black pepper to taste

Salad Ingredients:

  • 4 cups diced, cooked chicken (see notes)
  • one 14.5 oz jar hearts of palm (see notes)
  • one 6 oz. can extra large black olives
  • 1/2 cup sliced green onions, white and green parts
  • salt and fresh-ground black pepper to taste

Instructions

  1. Zest the skin of the lemon to get one tablespoon of lemon zest.
  2. Then squeeze the lemon to get 1/4 cup fresh-squeezed lemon juice.
  3. Whisk together the lemon zest, lemon juice, spicy brown mustard, olive oil, and black pepper to make the dressing.
  4. Cut up the leftover chicken into bite-sized pieces about 3/4 inch square.  (It won’t matter if some are a little bigger or smaller.)
  5. Put the chicken pieces into a plastic or glass bowl big enough to hold all the salad ingredients and toss with 1/2 cup of the dressing.
  6. Let chicken marinate while you prep the other ingredients.
  7. Drain the hearts of palm well, then pat dry with paper towels.
  8. Put hearts of palm on cutting board, and then drain the olives in the same colander.
  9. Cut hearts of palm into thick slices, and slice the green onions.
  10. Gently toss the hearts of palm, well-drained olives, and green onions with the marinating chicken, adding more dressing as desired until the salad is as moist at you prefer.
  11. You may have a little dressing left, which is good on salad greens or any type of grilled vegetables.
  12. Season the salad to taste with salt and fresh-ground black pepper.
  13. Serve right away or chill for a few hours.
  14. This will keep in the fridge for a day or two, but you might want to stir in a little more dressing when you serve it after it’s been refrigerated.

Notes

You will need one large lemon or 2 smaller ones to get this much juice. If you don't have spicy brown mustard, just use any mustard that doesn’t have added sugar. Four cups of chicken is about 1 lb. cooked chicken or 4 small breasts. Hearts of Palm (affiliate link) are sold near olives in most stores and they come in both jars and cans.
