Kalyn’s Kitchen Picks: Whole Wheat Couscous

Whole Wheat CouscousKalyn’s Kitchen Picks is a blog feature where I rave about products that I fall in love with and use a lot in my kitchen. This time I’m talking about whole wheat couscous, something I heard about from my neighbor Nancy, but hadn’t ever seen at the store where I shop until recently. For those who don’t know, couscous is not a type of grain, but a product made from coarse ground durum wheat and flour, using a unique process. Since products made with whole grains are considered “good carbs” for the South Beach Diet, this whole wheat couscous is perfect for phase two or three.

Couscous is often served with curries or stews, and is traditional throughout the middle east and in many parts of northern Africa. There are different types of couscous, but most of the couscous sold in American is the quick cooking or instant kind. The whole wheat couscous shown here can be made in less than 10 minutes. Tomorrow I’ll share a recipe for something delicious I ate with this the first time I made it, but meanwhile, here are ideas for recipes that would go well with couscous, and some ideas for couscous from other bloggers. Chicken and Asparagus with Three Cheeses would be great served with Couscous on the side.

The Mediterranean flavors of Chicken with Roasted Lemon, Green Olives, and Capers would be perfect with Couscous.

Couscous is often served with tajines, a type of North African stew, but I think this Mediterranean Beef Stew with Rosemary would taste wonderful served over Couscous.

  1. Rebecca, the South Beach diet is based on the glycemic index, not on the amount of carbs. Things that are whole grains (good carbs) are lower on the glycemic index, which makes them an acceptable choice. You can read here for more about the glycemic index.

    Doesn’t couscous, even whole wheat kind, have a fairly large carb count? I get confused about this … even though I understand that it’s considered “good carbs”. Can you help clarify this to me? Thanks.

    Couscous is one of my favourite fast foods 🙂 I prepare it when I don’t have much time for cooking, in tuna salad, with oriental veggies in peanut sauce… with lemon grass and onion…

  5. I’m always on the look out for the whole wheat in anything. Really enjoy the whole wheat couscous! After very careful consideration of all the dishes you pictured I think I’d like my couscous with Chicken with Roasted Lemon, Green Olives, and Capers.

  6. I just got their flax and soy pancake mix, so I will have to really try this out! Healthy couscous- another reason to eat it!

  8. I’ve just started eating couscous in the last few years and really like it – especially since I found a shop that sells it bulk and I can get large grain, which is my favorite. I’d love to find whole wheat… I’ll ask next time I’m there.

  9. Hi Kalyn! I’m in my second week of Phase 1, and while I was searching Google for some creative chicken recipes, I found your blog. I’ve just spent the last hour reading through recipes and making a list of things I want to try and now I can’t wait to go grocery shopping again! I’m so excited that I found your blog–it’s going to be very helpful as I transition from Phase 1 to Phase 2. I love to cook, but I am just not very creative (eggs for breakfast, chicken for lunch, and fish for dinner is my daily menu!). Thanks for all the GREAT ideas, and keep up the good work!!
