Laughing Cow Light Creamy Swiss Spreadable Cheese
I vividly remember the first time I tried Laughing Cow cheese when a man named Rex Turner brought it to my house for a party many years ago.  I thought it was a little strange at the time as a pot luck dish (sorry Rex!) but now I absolutely love this low-fat and low calorie spreadable cheese as a snack.  Lately I’ve been buying it over and over and eating it so often that I decided it’s time to officially make it one of my Kalyn’s Kitchen Picks.

I eat this stuffed into celery when I’m doing phase one.  I’ve even been known to eat that for breakfast, and it’s remarkably satisfying.  When I’m on phase 2 or 3 I love to spread it on whole-grain crackers.  Because the wedges are so low in fat and calories, you can have two if you’re especially hungry and not feel like you’re doing something bad.
My Costco started carrying this in four packs, which has really pumped up my Laughing Cow Cheese addiction, and lately I’ve been thinking about experimenting with this as a recipe ingredient, but so far I’ve only eaten it as a snack.  If anyone else has ideas for using it, I’d love to hear them in the comments.

  2. I substitute it for cream cheese on thin bagels.

  3. I have tried it in the deli marinated cherry peppers. Very colorful for an appetizer and yummy.

  5. I can't believe no one has mentioned the most simple idea. I use it instead of mayo on a sandwich. Laughing cow on one slice of the bread and stone ground mustard on the other. I also think it was Hungry-Girl who suggested using it in tuna salad – it works great. I'm all for leaving out mayo wherever I can.

  8. This stuff is great. I love it in scrambled eggs with pepperoncini slices and diced Gallo light salami. It feels like you're eating something rich and decadent.

  10. There is a really popular soup recipe in Europe using it. I don´t know how it would translate into american units but I can try. Usually you get the same weight of zucchinni as the same volume of water but that does not work in american measures. Take about one pound of zucchini scrubbed and ends removed sliced and half a liter ( dunno what that is in american measures, a bit less than 20 ounces I think) of water, boil the zuchinni for some 10 minutes till quite soft. You can had some stock cube or other flavouring (herbs) to the water. Then blend it all with a hand blender. Add 2 or 3 triangles of Laughing Cow Cheese and blend it all again. Don´t reheat. Maybe add some pepper or nutmeg or something. There are some tricks like taking some of the water before blending and adding only if you think the soup is too watery. It´s a very popular recipe for non-dieters as well.

  12. I am a Laughing Cow Cheese addict! I recommend you try scrambling eggs with Laughing Cow, green onions, and a little pepper. Soooooo delicious and fills me up! Flavors are great and the scrambled eggs are creamy and decadent.

  13. I use laughing cow with my mashed cauliflower. Try the different flavors, like garlic for this. It adds a creaminess to the cauliflower puree that I love.

    I've also tossed steamed broccoli with it.


  14. I first had laughing cow cheese on a trip to Italy. It sounded strange, but I loved it! Now I love the low fat version here at home!

  16. Oh, I love that there are so many fans here! I recently drove past my regular Safeway (sort of a small one) to a larger one and it has the bleu cheese which is my new favorite flavor! I also have french onion and the garlic & herb and sun-dried tomato (my refrigerator has a very colorful array of LC). I have to look around for the chipotle version, that sounds GREAT!

    Lyn at Escape from Obesity has some good recipes that use the LC wedges (Lyn used to be on SB, then went to MF; *I* used to be on MF and have left "the cruel diet" for a more humane SB life lol).

  17. I think it may already have been said, but some (frozen/thawed, dried) spinach heated up with a wedge (I prefer the garlic & herb) makes for a killer creamed spinach. Yum yum!!!

    BTW, also good right off a spoon…no edible vessel required…

    Lacey, I think at my Costco it's sold refrigerated. I don't think I would store it out of the fridge, but I agree that statement is odd.

  20. If the people @ LC ever do get ahold of you can you ask them what "refrigerate after purchase" means? This has bothered me ever since the last time I bought some. It's not refrigerated at the store, why would you have to refrigerate it once it gets it in your house?

  25. Thanks for that info; now I don't feel quite so perplexed that I haven't seen them. I don't have Trader Joes (sigh) but will definitely look for them at Kroger (Smiths in Utah.)

  26. The three new LC flavors (blue cheese, sun-dried tomato basil and queso fresco chipotle) were just released this past summer/early fall. I haven't found a store in my area yet that carries all three, but I've found the blue cheese at Trader Joe's and the other two at two different Krogers. The blue cheese is my favorite, especially when combined with some roast beef and high-fiber cracker like Wasa.

  27. I love hearing from so many people who also love this product, and love this idea with sauteed cabbage!

  28. My favorite use for the cheese (other than a snack) is to saute onions, cabbage, and garlic in olive oil, then mix in a few triangles of the cheese at the end and warm through. It makes a great side for baked chicken or fish.

    I'm jealous of Amy's flavors! I moved away from CO a few years ago and don't get any more King Soopers!

  30. Wow, I can see I need to seriously expand my horizons when it comes to Laughing Cow! I had no idea there were so many different flavors.   32. I like to spread the Laughing Cow light cheese on red bell peppers as a snack. Yum. Love that crunch and slight sweetness with the creamy cheese.

  33. I was in a South Beach buying frenzy at HEB yesterday and they had even more new flavors – Light Blue Cheese and Light Mozzarella, Sun-Dried Tomato & Basil. Kalyn I've been following your blog for a little over a month now and really enjoy it. My favorite recipe so far is Spaghetti Squash Chard Gratin. Here in Texas I've got Swiss Chard growing. Yummy and thanks for all you do.

  35. One of my favorite uses is to cut up a wedge and add it to Egg Beaters and scramble. It really makes them creamy and delicious. Of course it's even better added to real eggs. I have also enjoyed their other flavors, especially the blue cheese incorporated in your own version of light salad dressing.

  37. I love this because it comes in small sizes. I've been eating wedges for years – and I have to confess that I like Lite French Onion with cashews, for some reason.

    I like the little wheels, too, as they are perfect for mid-afternoon snacks. I used these little buggers – gouda is my favorite – to make sauces.

    They are essential to South Beach Phase One, and I am happy to see I am not the only fan.

    Long time silent follower here! I too buy the Laughing Cow Lite in bulk and have used it many times as a replacement for cream and/or cream cheese. Turkey-bacon wrapped jalapeno poppers are my favorite, baked with pecan and Laughing Cow cheese "stuffing" and topped with a cajun-spiced grilled shrimp. Soooooo good. I don't have an actual recipe, but I've made numerous variations of this.

  40. For years I've been making the South Beach "potatoes"-well cooked cauliflower mashed with laughing cow wedges. The new Blue Cheese flavor is amazing (as are all of the new ones). I've served this to plenty of people (dieters and non dieters) who all love it. Left overs are great "fried" the next morning with eggs (another way to get veggies in at breakfast).

  41. Amy I haven't seen the Queso Fresco and Chipotle flavored one, but that sounds like something I'd like!

    Beth, sounds like a good idea to use it in Alfredo (although Amy's idea of using it to stuff chicken breasts is probably more South Beach Diet friendly!) It is odd they don't make bigger sizes, but the small ones sure are perfect for a snack!

  42. I've definitely bought these a few times when I'm needed a cheese fix. They really need to start selling it in larger packages (tubs or bricks like cream cheese) since SO MANY people cook with it. I hear it makes a pretty amazing alfredo!

  43. I love Laughing Cow Cheese as well! I have seen the wedges used in rolled up, flattened chicken breasts; then oven-baked.

    Recently, King Soopers in Colorado added more flavors, one being the The Laughing Cow Light Queso Fresco & Chipotle. It is wonderful melted over veggies or as a snack.
