Kalyn’s Kitchen Picks: Fage Total 0% Greek Yogurt

Fage Total Greek YogurtIt’s been a while since I’ve shared one of my favorite ingredients for Kalyn’s Kitchen Picks, and this Fage Total 0% Greek Yogurt (pronounced Fa’ Yeh) is long overdue for a pick. Not only is it creamy and delicious, but it’s completely fat free. Normally I’m not a fat-free kind of gal, but this stuff is great. I was so excited last July when my friend Georgette told me she’d found it at Wild Oats near my house, and used it when she taught me to make the World’s Best Tzatziki Sauce. Then about a month later I discovered Agave Nectar (another pick) and used it to make Greek Yogurt with Agave Nectar and Pecans.

Not only is this delicious and creamy, but yogurt is one of the SuperFoods we all should be eating regularly. Plus, yogurt is also ranked as one of the World’s Healthiest Foods.   1. Sharon, there’s no Trader Joe’s in Utah (sigh!) If there was I’d definitely try it.

  2. I’ve recently started buying greek yogurt and eating it with berries & granola. I had been wondering about other applications and am glad you posted recipes. I usually buy the Trader Joe’s brand now since its a few dollars cheaper. Try it out- its also very good!

  4. I too am a huge fan of Fage Greek yogurt! I can’t imagine how I have been able to live this long without it. I discovered it on the shelves of my Whole Foods store. However, it is a tad pricey, so I embarked on a yogurt-making adventure. Unless you like the chancy results of the many ‘home recipe’ versions out there (I am, unfortunately speaking from experience) splurge on a Salton 1 qt. yogurt maker and Cuisipro yogurt cheese maker (found mine at Amazon, under 30.00 for both together). I just finished my first batch, and I am being completely honest when I say mine is virtually indistinguishable from the Fage. You can imagine the joy and the happy dancing that was taking place in my kitchen! I adjusted the recipe that came with the Salton. I used 3.5 cups 1% organic milk, and .5 cups of heavy cream (I will try half-and-half next). After heating and cooling and adding .5 cups of Fage yogurt as a starter (following the instructions) this concoction ferments in the Salton for 10 hours. Cool it for 2 hours in the fridge, then scoop what you can in the Cuisipro (it doesn’t all fit). Return to the fridge for 2 hours, drain the whey (or keep for cooking), add the rest of the yogurt that wouldn’t fit, and drain for 2 more hours. The result had exactly the same taste and texture as the Fage, for a fraction of the cost. If you can’t find Greek yogurt where you live, or don’t like paying the high price, or just like making things from scratch, you might want to give this method a try. I will be making this weekly. I have heard that if you use ultrapasteurized milk, that you can skip the heating and cooling steps for the milk, which would be great. I will give that a try next. Hope this was helpful!

  9. I make a yogurt parfait similar to the Starbucks one using Fage and it’s wonderful. Love it for breakfast, a lot less sugar than the real stuff and it just wouldn’t be as good with any other yogurt.

  10. FAGE is marvelous. It really is different from most of the other Greek yogurts sold here. I love to eat it with fresh berries.

  12. I also love Fage Greek Yogurt. But you can make strained yogurt, extremely similar to Fage yogurt, at home very easily and it costs a lot less.

    Just buy a large carton of regular plain full fat yogurt (do not buy nonfat or low fat yogurt). Then place a coffee filter or cheese-cloth in a metal strainer. Place the strainer on top of a mixing bowl. Dump the entire carton of yogurt in the strainer. The whey liquid in the yogurt will filter out over several hours. What you will have is nice thick strained yogurt. In fact, when you are done the the coffee filter will easily peel off of the yogurt.

    In using a large carton of yogurt, it will yield 2 cups of strained yogurt.

    Because all of the whey is drained out of the yogurt, the carb count for one cup of yogurt will be only 4 carbs. This is because of “the yogurt exception.” You can Google this and learn more about it.

    I like to make strained yogurt overnight in the refrigerator. Then by morning I can have some yogurt for breakfast or lunch.

    It is recommenced that you use full fat yogurt. Since, nonfat or low carb yogurt will only filter out very little whey.

  16. I’ve been a Fage-o-maniac since the 1st tub I picked up at Trader Joe’s. It’s wonderful with chutney by the way–I made some apricot chutney for an Indian dish, and then ate the leftovers on Fage for breakfast over the next week: heavenly.

    Sam, that’s exactly why I didn’t find it, and it never occurred to me about the other spelling. But it’s fun seeing you were writing about it clear back in 2004!

  21. I love that yogurt!! There’s only one place in Estonia that sells it, however, and it costs a lot more that it did in Scotland. However, I’ve used it as a starter to make my own quite a few times (I buy the full-fat version, however:)

  22. Dawn, I just see the word “homogenized” milk in Peter’s recipe. I don’t see anywhere that says it has to be whole milk. I think you could make that with skim milk and it would be SB legal, but I’m not sure how the recipe would work with skim milk. You might try leaving a comment on Peter’s post and ask him if he knows whether using skim milk will affect the results.

    If that doesn’t work, I know you can buy fat free yogurt and strain it (see the link for how to do that). That would definitely be SB legal and the result would be close to Greek yogurt.

    I found a Greek style yogurt at a shop from Meditteranea but they had it once and now it is no more…. I love Greek yogurt with honey and walnuts…my all time favourite breakfast!!!!!!

  28. I love this stuff!! I use some agave nectar, raisins and cinnamon and eat this instead of ice cream. It’s my treat. Also great with pineapple and a tiny bit of macadamia (sorry I can’t spell) nut butter (probably not as SBD friendly).
