My love affair with dried beans started when I was following the original South Beach Diet where beans were considered a “good carb” and South Beach encouraged you to eat them daily. Now that I’m following a more carb-conscious eating plan, beans are definitely a carb-splurge for me, but you’ll see that most of my bean salads combine the beans with protein or low-carb vegetables to keep the carbs lower.     These all look great – although you're missing one of yours that is a favorite of mine that I make regularly to bring with me to work…the carrot, parlsey and garbanzo bean salad. Love it! But I'll have to branch out and try some of these!!

  7. What a beautiful collection of salads. I love black beans and white beans, and lentils, of course. Still can't quick adore chickpeas, unless they're ground in hummus or soup, but I'm working on it. I like to make big batches of beans in the slow cooker, and freeze them in salad-size portions to be at the ready when the urge for a salad strikes.

One of the wonderful things about having the great blogging and recipe history like you have, Kalyn, is that you can do one of these roundups and we all find something new to us or see a recipe that we still haven't made. Your Southwestern Black Bean Salad falls into the latter category for me. Serendipitously (because sometimes one fails to plan appropriately), I believe I have all the ingredients on hand–woohoo! 🙂

    No Indian summer here unfortunately. As much as I love fall, I was hoping to have enough of an Indian summer for good camping weather (warm days, cold nights) before it got too cold. But rain in the forecast added to the cold has kept us home this weekend. Hoping for a little better weather tomorrow for our support group picnic.

    Salads? I'm pretty partial to the Pulled Chicken Salad with Lime-Cilantro Dressing that I just made. (Chickpeas or Beans can be used in place of chicken.) And I crave this Chickpea Salad from Mary (Gluten-Free Spinner.
