We are now officially past the half-way mark of December, and some of you may have been overdoing it a tiny bit on the holiday eating, right? This post with ten of my favorite Phase One soup recipes is a Public Service Announcement for anyone who’s hoping to make it through the rest of the holidays without pants that are uncomfortably tight. Healthy soups like these are warm and comforting when it’s cold outside, and they’re all delicious. Let’s start with the Chicken, Black Bean, and Cilantro Soup pictured above, something I’d happily eat for lunch or dinner most any day.
When I posted this recipe for Spicy Sausage, Lentil, and Tomato Soup I said it might even be my best lentil soup recipe ever (and that’s saying something!)
Years before I went into my frenzy for cooking with kale, I made this Sausage and Red Russian Kale Soup with Tomatoes, Chickpeas, and Herbs.
Yellow split peas are one of the ingredients I discovered in 2011, and I loved this Spicy Yellow Split Pea Soup with Italian Sausage and Green Pepper.
This Vegetarian Black Bean Soup and Tomatillo Soup with Lime and Cilantro is made in the CrockPot.
This Cannellini Bean and Kale Soup with Ham and Sherry Vinegar can be made in a CrockPot or on top of the stove.
Skip the pita bread in the photo for Phase One, but you can have this Roasted Italian Sausage Soup with Garbanzos, Lentils, and Roasted Tomatoes.
I’m crazy about this Goulash Soup with Red Peppers and Cabbage, but my bowl would have a big dollop of sour cream in it!
And last but not least, this Lentil Soup with Roasted Italian Sausage and Red Peppers is an oldie but goodie from back in 2007!
