Five of My Favorite Phase One Soups

If it’s soup weather where you are, try this Cannellini Bean and Kale Soup with Ham and Sherry Vinegar.
It’s seriously soup weather in Utah, and I know a lot of you are still doing phase one, so here are some of my favorite phase one soups.  You might like to try one or more of these if it’s soup weather where you are!  I love soup with greens, and this Cannellini Bean and Kale Soup with Ham and Sherry Vinegar is a great soup recipe I came up with last January.

I love to have parties where I serve soup, and this Goulash Soup with Red Peppers and Cabbage is one I’ve served many times through the years.

Definitely one of the easiest phase one soups on the blog is this Ground Beef and Sauerkraut Soup which I love to serve with sour cream.

Just to show how my photo skills have improved (hopefully!) this is a very old photo, but this Lentil Soup with Italian Sausage and Red Bell Peppers is one of the best-tasting lentil soups I’ve made.

And finally, a soup that could be made with carrots, but to make it phase one I used red bell pepper instead in this Split Pea Soup with Ham, Bay Leaves, Epazote, and Red Bell Pepper.

  2. I made the Ham, Kale and Cannelini Soup for lunch with my friends and we all thought it was great. It makes a lot of soup. I've eaten it for dinner for 3 days noa and I still like it.

  7. I highly recommend the Goulash Soup–that was a major winner in our house.

    I will have to look at the sauerkraut recipe–love the stuff. Usually we make a kielbassa kraut soup as we live in a ethnic area with top-notch kielbasa.


  8. It is soup time, and we love many varieties of lentil soup best. Lentil with spinach and shitake mushrooms is a favorite now. Real Hungarian Gulyas leves (goulash) is another favorite, or just plain (though it's anything but) weight watchers vegetable soup.

  9. Soup is one of the hardest things to photograph (in my opinion — I'm still trying to get it right). All of yours look so appealing. In soups that call for ham, because I don't eat it, I often substitute some barbecue sauce. Not phase one, I know, but it's handy to know that there's a good substitute.

  10. Your soups all look so inviting! I love soup this time of year, such a comforting meal. My favorites are lentil and black bean soups.
