I’m a huge fan of casseroles for Weekend Food Prep because I love the idea of cooking once and having leftovers to freeze or eat for a few days. And there are a lot of recipes in the Casseroles category on this blog! So it was a bit hard for me to narrow down my picks to just Five Favorite Low-Carb Casseroles, but if I had to choose only five, these are all casseroles I’ve made over and over!

And all of these are things that have been hugely popular on the blog as well. If you haven’t tried some of these favorite casseroles yet; hope you enjoy trying them! Just click the title under any photo to see the complete recipe. And enjoy!

More about low-carb casseroles:

Any of these casseroles recipes will be a great dish for low-carb or Keto diet plans. For the original South Beach Diet which some of my readers still follow, you will want to choose low-fat dairy products and reduced fat pepperoni for these recipes. See tips in individual recipes about adaptations if needed for certain diets. And if you’re a casserole fan like I am, you can use Casseroles Recipes to find more casseroles on my blog.

  1. I understand that none of the ones you posted contain canned soup, but you talked about not posting others because they DID you canned soup…I thought the link I gave you might help with some additional casseroles you might want to post.

  2. Dreamsoaps, I'm sure you meant to be helpful, but none of these recipes contain canned soup.

  5. I was so excited to stumble upon your blog today! My husband's doctor has told him he must cut out all bread, potaotes, rice and pasta. Of course I immediately looked up South Beach and came across you. I was so worried about boring side dishes in my future, but I've already printed several yummy looking ones here. Thank you for sharing with all of us!

  6. Thanks Jen!

  11. Hi, Kalyn-
I posted this post on casseroles on my FB business page to send my readers to you- this is a great, great post! I often will pop up a blog post from one of my fellow foodies for my group members. I tell them I'll find the yummy stuff for them so they don't have to!

Thanks for a great bunch of recipes.

  12. Thanks for all the nice comments about these casseroles. (I was off on a jaunt with friends yesterday, so most of these comments got posted by iPhone, but it was fun to read them during the day!)

  13. They all look delicious!

  14. Nice! My wife makes the best chicken and cheese casserole, but we'll have to give a few of these others a shot.

Especially the turkey one- leftovers are what make Thanksgiving one of my favorite holidays!

  15. I love seeing casserole recipes. It's great to be able to get several meals for myself.

  16. I love casseroles. But low carb recipes are hard to find. Also, like you, I don't use canned soups. Printing out recipes now! Thanks for the printable formatting.

  17. Great post, thanks for the recipe round-up! I must also say, your photography is SO GREAT!

  18. Thanks Kalyn! I really appreciate the "made-over" casseroles from the SouSh Beach philosophy.

We are so busy! Sometimes I just don't have time to grill or prepare meat, fix two vegetables or one and a salad. Casseroles were my busy life go-to until South Beach complicated my meal planning (and helped me lose weight!) Thanks!

  19. I have a category for casseroles, but now that you mention it, I'm wondering when the last time I actually looked to see what was listed there! You've got some yummy ones here. The make it and freeze it idea does come in handy, doesn't it? Does lasagna count as a casserole? That's what is in my freezer.

  20. Big Dude, thanks! (Me too!)
