Christmas Favorites: Five Favorite CrockPot Meals to Cook While You’re Busy Having Holiday Fun

By the time you read this post I’ll be at my sister’s house, taking the rest of the week off from the blog and looking forward to Christmas morning with the kids.  Before I sign off for a few days I thought I’d share one more set of favorite recipes.  I’ve given you ideas for Appetizers for Holiday Parties and Breakfasts for Christmas Morning, and this time I’m sharing five favorite CrockPot meals.  Food that cooks itself  in the slow cooker while you’re out having fun is perfect for the holidays, so let’s start with Chicken Fajitas in the Crockpot, one of the first crockpot recipes ever posted on Kalyn’s Kitchen and still one of my favorites.

Or maybe you’d rather come home to Hungarian Pot Roast with Sour Cream and Paprika Gravy, another of my very favorite crockpot meals, and something that would make a great dinner after a busy day.

This crockpot Pulled Pork with Low-Sugar Barbecue Sauce would be great to have around during the holidays.  Serve this on buns for the kids, and with a side of Spicy Mexican Slaw for the adults.

Another crockpot meal that’s great when the weather is cold is this Louisiana-Style Red Beans and Rice.  I make this with barely-spicy Green Tabasco, so if you use red Tabasco, be sure to use a lot less!

Finally, I think the crockpot is one of the best ways to cook pot roast, and this Southwestern Pot Roast is delicious and the recipe is about as easy as they come, with only five ingredients.  How do you use your crockpot or slow cooker during the holidays?  If you have some favorite crockpot recipes that you always make at Christmas, let us know in the comments.

Now I’m going to concentrate on seriously relaxing and just having fun for the next four days, but  first I want to send best wishes for a very  Happy Holidays for all my readers and blogging friends!    I hope you have a wonderful time celebrating the season with the people you love.  All of us who are prosperous enough to enjoy reading about food on the internet have a lot to be thankful for during these difficult times, so please pause to give thanks, and do what you can to help those among us who are less fortunate.
