Slow Cooker Chicken Fajitas
Slow Cooker Chicken Fajitas are an easy dinner idea and with low-carb tortillas or cauliflower rice this is a delicious low-carb meal! And Crockpot fajitas are great to make in the summer when you don’t want to turn on the stove.
PIN Slow Cooker Chicken Fajitas to try it later!
Years ago I got this recipe for Slow Cooker Chicken Fajitas from a blog called MomFood, written by a blogger named C. Jones who graciously agreed to let me republish it here. That blog disappeared shortly after I got the recipe, although C. Jones did leave a comment on the original post in 2006. At the time she was still reading Kalyn’s Kitchen, so if she’s still reading now, I hope she’ll be pleased to see this. I’m trying to update my oldest posts that don’t have photos, so today I made fajitas in the crockpot and took a few pictures.
Of course, I know these chicken fajitas made in the slow cooker aren’t really fajitas like the ones that come on a sizzling plate at a restaurant, but this recipe is still pretty delicious even without that fajita sizzle. These easy-to-make Chicken Fajitas are delicious any time of year, but I especially love to make this in the summer, because using the slow cooker will keep your kitchen cool. But if you want another option for cooking fajitas, check out my recipe for Sheet Pan Chicken Fajitas, which is also a winner!
What ingredients do you need for this recipe?
- boneless skinless chicken breasts
- red onion
- red bell pepper
- green bell pepper
- Chili Powder (affiliate link)
- ground cumin (affiliate link)
- salt
- chicken broth
- fresh-squeezed lime juice
- low-carb tortilla, I like Mission Carb Balance Low-Carb Tortillas (affiliate link)
- Mexican four-cheese blend
- sour cream
- guacamole
- salsa
- (Could also add lettuce and tomato.)
What do I serve with Slow Cooker Chicken Fajitas?
The chicken and roasted veggies are delicious served in low-carb tortillas or over cauliflower rice, but truthfully rice or tortillas are completely optional for these crockpot fajitas. I like often eat this just piled up on a plate with melted cheese, salsa, and a dollop of sour cream. Some Cilantro-Lover’s Guacamole would go great with it too, but unfortunately there was none of that left for the photo!
Can Slow Cooker Chicken Fajitas work for Keto?
You can easily make this recipe Keto friendly by simply serving the chicken and veggies on a plate, topped with melted cheese. I’ve eaten it that way many times and always enjoyed it! This variation would also be gluten-free.
What size slow cooker did I use?
I used an old Crock-Pot 2.5-Quart Slow Cooker (affiliate link) for this recipe, but as you can see it was quite full and a larger slow cooker would definitely work.

Ingredients
Ingredients
- 2 lbs. boneless skinless chicken breasts (see notes)
- 1 onion, thinly sliced (I use red onion)
- 1 red bell pepper, sliced in half-circle slices
- 1 green bell pepper, sliced in half-circle slices
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 cup chicken broth (see notes)
- 2 tablespoons fresh lime juice (more or less to taste)
For Serving
- flour tortillas (I useĀ low-carb tortillas)
- grated cheese (I use Mexican four-cheese blend)
- sour cream
- guacamole
- salsa
- (Could also add lettuce and tomato.)
Instructions
- Trim all visible fat and tendons from chicken breasts, and cut chicken into 1 inch crosswise slices.
- Place chicken in crockpot
- Cut both ends from onion, then peel, cut in half top to botton, and cut into half-circle slices.
- Add onion to crockpot.
- Cut ends from red and green bell pepper, cut in half top to bottom, remove seeds and membranes, and cut into half-circle slices. (Cut up the stem and bottom end too.)
- Add bell peppers to crockpot.
- Squeeze lime juice over chicken, onions, and peppers in crockpot.
- In a small bowl stir chili powder, cumin and salt into chicken broth (I used homemade chicken stock).
- Pour over chicken.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until tender. (I usually cook about 3 hours on high.)
- Spoon chicken and vegetables into warmed tortillas (I use low-carb tortillas) and serve with toppings. This would be great with Cilantro-Lover’s Perfect Guacamole.
- This is also delicious just served on a plate, with cheese melted over and other toppings added.
Notes
You need about 4-5 chicken breasts to make six servings. I used homemade chicken stock but canned chicken broth or chicken stock from a carton would be fine for this recipe.
Nutritional information doesn't include optional toppings or low-carb tortillas.

Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
If you serve these crockpot fajitas with low-carb tortillas or over cauliflower rice, this can be a low-carb meal. If you’re serving this with low-carb or whole wheat tortillas, it would be a great meal for phase 2 or 3 of the original South Beach Diet. Just eat the chicken and veggies topped with some cheese without tortillas or rice for stricter low-carb or Keto.

Amy, so glad you enjoyed it. You are welcome to rewrite the recipe in your own words and share it with your own photo. I also permit the use of my photo with a link back to get the recipe from my site. Thanks.
I found this recipe, and your blog through pinterest and I am so happy I did! The Fajitas were yummy! I would like to share this with family and friends on my blog, with credit back to you of course, if you don't mind.

So glad you liked the fajitas!
I just made these and they came out so good!!
Heidi, hope you both enjoy them!
Very excited to try this tomorrow! My husband loves fajitas and (being the bad wife that I am) I've never made them in our 8 years of marriage!
Yes, that sounds like a good plan!
Just threw this in the crockpot, but I tripled the peppers. If it's full of veggies, I can eat more, right?? š
I think bottled lime juice might be a little stronger so I would use a bit less, but I think it will work.
Do you think I could use bottled lime juice?
Cristy, I'm sorry but without trying it I wouldn't be sure how to adapt this recipe to use beef (Chicken gets tender much more easily; I'm not sure if the beef would be tender with this little liquid.) You might try Googling "Crockpot Beef Fajitas" for tips and then try it.
If I were to cook this with some type of beef what would I use and how would I do it? Thanks! I've tried it with the chicken and it was awesome!
Linda, that sounds delicious! So glad you enjoyed it, and thanks for letting me know.
Hi Kalyn, I made this yesterday for our Super Bowl dinner, and it was fabulous. We did it the South Beach fashion putting the chicken/pepper/onion mixture over shredded lettuce on the plates and topped with shredded Mexican cheese mix. Served with Wholly Guacamole from Costco (my name is Linda, I am a Costco-holic), home made salsa (a great recipe here on Ree's blog- http://thepioneerwoman.com/cooking/2010/01/restaurant-style-salsa/), sour cream, and diced plum tomatoes. It's great that we're going to enjoy this same feast for at least another dinner and a lunch this week! THANKS for another fab SB recipe.
This sounds super easy and tasty… thanks for sharing!
Susie, that is a drag about the electricity, but do try again. These are great in the crockpot.
Oh, it smells delicious!! We lost power today so I couldn't use my crock pot. I was VERY sad. They still turned out well cooked on the stove, but I was looking for "no effort" Thanks!! I will have to try them again in the crock pot for sure!!
Amy I don't think it will change the cooking time much to make a smaller amount, but you need to be sure to use a small enough crockpot. The crockpot needs to be close to 2/3 full to cook properly. Hope you like it!
Hi Kalyn! I've had this on my to-do list forever and am excited to finally try it this week. Read in the comments that it scales up well for a crowd, but was wondering if the cooking times would remain similar if I halve the recipe? I'm very new to crockpot cooking, so don't have a feel for that kind of thing yet. Many thanks!
Fajitas are so fun to eat…a little prep but the guests will love you and the chicken for it!
