Are you ready to make dinner in the oven? This Cheesy Low-Carb Zucchini and Sausage Sheet Pan Meal cooks in about 30 minutes and it uses zucchini, so I think that sounds like a pretty good dinner for summer-into-fall weather.

This simple recipe was inspired by some zucchini and yellow squash that needed to be used and the Aidell’s Bacon, Mushroom, and Swiss Cheese Smoked Sausage I bought on impulse after I tasted it at Costco. If you follow that link you’ll see that the sausage is really low in carbs (and it’s very tasty) but if you have a favorite pre-cooked sausage with chicken, turkey, pork, or beef you can certainly use any type of sausage you prefer in this easy fall sheet pan meal.

I also want to mention one variation on the preparation method for this recipe if you’re someone who likes your zucchini to still have some crunch. If you follow the cooking instructions the zucchini will be fairly soft, and if you’d prefer zucchini with a little more bite to it, just put the pieces of sausage on the sheet pan first, put the pan in the oven, and let the sausage start to cook while you cut up the zucchini. Then after 5 minutes or so, add zucchini slices to the pan and continue with the recipe. I’ll mention that below as well. And if you’re a zucchini and sausage fan, hope you enjoy! How to Make Cheesy Low-Carb Zucchini and Sausage Sheet Pan Meal:

  1. Preheat oven  and spray a sheet pan with non-stick spray.
  2. Wash the zucchini and yellow squash, then cut off ends, slice lengthwise down the center; then slice into 3/4 inch thick half-moon pieces.
  3. Toss zucchini with olive oil, Italian Herb Seasoning (affiliate link), salt, and pepper.
  4. Lay zucchini on the sheet pan flat sides down and so that no squash pieces are touching each other.
  5. (Note: If you prefer your zucchini a bit more crisp, cut up the sausage, put it on the sheet pan, and put the pan in the oven to start roasting the sausage before you do the steps above.)
  6. Trim ends off pre-cooked sausage of your choice. Slice sausage into 3/4 inch thick slices and tuck between the zucchini pieces on the sheet pan.
  7. Roast zucchini and sausage pieces 15 minutes. (Or roast sausage 5-7 minutes, add zucchini, and roast the rest of the time if you’re going for crisper zucchini.)
  8. After 15 minutes cooking time, sprinkle zucchini and sausage with coarsely grated Parmesan cheese.
  9. Put sheet pan back in the oven and roast about 12 minutes more, or until cheese is nicely melted and starting to brown and zucchini is done to your liking.

Cheesy Low-Carb Zucchini and Sausage Sheet Pan Meal

This Cheesy Low-Carb Zucchini and Sausage Sheet Pan Meal is a great summer-into-fall dinner idea.

Ingredients:

  • 2 medium zucchini, cut into thick half-moon slices
  • 2 medium yellow summer squash, but into thick half-moon slices
  • 2 T olive oil
  • 2 tsp. Italian Herb Seasoning (see notes)
  • salt and fresh-ground black pepper to taste
  • 4 links (12 oz.) pre-cooked sausage of your choice (see notes)
  • 1 cup coarsely grated Parmesan cheese (more or less to taste)

Directions:

  1. Preheat oven to 450F/230C/ Spray a sheet pan with non-stick spray.
  2. Wash the zucchini and yellow squash if needed, then cut off both ends. Cut Zucchini and yellow squash lengthwise down the center; then slice into 3/4 inch thick slices.
  3. Toss zucchini with olive oil, Italian Herb Seasoning (affiliate link), salt, and pepper.
  4. Lay zucchini out on the sheet pan, flat sides down, placing it so that no squash pieces are touching each other if you can.
  5. Note: If you prefer your zucchini to stay a bit more crisp, cut up the sausage, put it on the sheet pan, and put the pan in the oven to start roasting the sausage before you do the steps above.
  6. Trim ends off Aidell’s Bacon, Mushroom, and Swiss Cheese Smoked Sausage (or pre-cooked sausage of your choice). Slice sausage into 3/4 inch thick slices and tuck between the zucchini pieces on the sheet pan.

Any herb blend labeled Italian Herb Blend or Italian Herb Seasoning (affiliate link) will be fine for this recipe. Low-Carb Diet / Low-Glycemic Diet / South Beach Diet Suggestions:
